Cube Steak Recipes

we like ours coated in kraft's oven fry (it's really crispy) and baked. i serve it w/ spaghetti and put some of the sauce and some cheese on the meat. mmmm...
 
Can I ask how you find your beef? I would love to buy a 1/4 or 1/2 a cow or however you do it...I've never done it before and wouldn't know how to find a place or how to get the cuts that I want. Any advice would be great...sorry if I'm hijacking...

My mother used to make what she called "Swedish Steak" using cube steaks, and I make it occasionally when I can get a good deal on cube steaks:

Coat both sides of the steaks with a liberal coating of yellow mustard then prick all over with a fork to tenderize. fry with plenty of choped onions and serve with onions over the top.

The yellow mustard does a good job of helping to tenderize the meat.
 
Bitstec Encebollado

2lbs cubed steak pounded thin
4 tblsp of Olive oil
2 large white onions sliced into thin rounds
2 small or one large garlic tooth/teeth smashed then minced finely
Pinch of dried oregano leaves
fresh cilantro (coriander)
4 tblsp lime juice (I use one whole lime)
fresh cracked black pepper
course salt to taste (I add salt at the very end)
1 tablespoons of water
Adobo (spanish seasoning msg free) con Comino w/cumin

Add 2 tbls of olive oil to a frying pan and lightly fry/saute onions till slightly soft inside and crispy outside at low/med flame. Remove onions reserve for later. Season the steak with pepper, adobo and oregano lightly on both sides. Add garlic to pan with a teaspoon or so of olive oil and saute lightly maybe a minute but don't let them brown just lightly golden and then add the steaks flip them once they start to pool blood on one side cook them well medium rare however you like then lightly Sprinkle water over steaks and then flip them one last time.

Remove steaks and plate them with onions on top. Use lime juice to deglaze the pan and pour juices over meat. Garnish with minced cilantro.

Ingredients

* 1 whole Large (or 2 Small) Onions
* 2 sticks Butter (lots And Lots Of Butter)
* 2 pounds (to 3 Pounds) Cube Steak (tenderized Round Steak That's Been Extra Tenderized)
* Lawry's Seasoned Salt (or Similar Seasoned Salt)
* ½ cups (approximately) Worcestershire Sauce
* Tabasco Sauce, To Taste
* 4 whole French/deli Rolls (earthgrains Are Best!)

Preparation Instructions

Slice onions and cook in 1/4 stick butter until soft and light brown. Remove and set aside.

Slice cube steak against the grain. Season with Lawry’s.

Heat 2 tablespoons butter over high heat (in same skillet) until melted and beginning to brown. Add meat in single layer. Cook one side until brown, then flip and cook until brown, about a minute on both sides.

Add 1/2 cup (at least) Worcestershire sauce, 5 to 6 shakes Tabasco, and 2 tablespoons butter. Add cooked onions. Stir to combine.

Butter halved French rolls and brown in skillet.

To assemble, lay bottom half of French roll on plate. Place meat mixture, followed by a spoonful of juice from the pan. Top with other half of roll, cut in half, and devour!

I was just going to post this recipe!!! We love this sandwich!! Add cheese..divine!
 
My favorite is breaded Palomilla. Put garlic powder and fresh lime juice on the cube steak and let it marinate for several hours in the fridge. When it is time to cook, you can coat the cube steak with cracker meal and fry in a pan. Once it is done and you have a crisp coating, you can top it off with sauteed onions and more fresh lime juice.
 
CRISPY ORANGE BEEF

For Stewed Meat:

1 lb stew beef
flour (for dredging)
cooking oil (to sauté meat)
dash of salt and pepper

Sauce:

1 tablespoon cooking oil
1/2 cup teriyaki sauce
1/4 cup soy sauce
2 cloves garlic, minced
1 tablespoon flour
juice of 1 orange
zest of half an orange
1/4 cup brown sugar
1/4 cup granulated sugar
pepper, to taste

To prepare meat:

Season stew meat very lightly with salt and pepper and lightly toss in flour. Shake off excess flour. Coat a shallow pan with cooking oil and gently pan fry stew meat.

Drain meat and set aside.

To prepare the sauce:

Add cooking oil to sauce pan and gently cook garlic. Add flour to garlic and oil; cook to remove the uncooked flour taste. It will look pasty at first.

Stir in soy sauce and teriyaki sauce, whisking to prevent lumps. Add orange zest, orange juice, pepper, and all sugars.

Allow sauce to come to a boil and it will thicken. Cook to desired consistency. Toss stew meat in enough of the sauce just to coat it. Serve over rice.

Got this online and loved it! I pounded the meat a lot beforehand so it would be more tender
