As for CS options I say look at menus before you go and have a set of choices for each park. We are a vegetarian family and I was concerned before we arrived. I was taken by surprise by the glee expressed over the Uncrustables PB&J. Apparently my nephew had them in school and loved them. He selected one 2 or 3 times while we were there. So first rule give the kids a say, they may surprise you; my socks were knocked off. Disney does know kids. Honestly pizza, PB&J and mac and cheese were exactly what he wanted during our stay.
Use your CS for breakfast (cereal, Mickey waffles, eggs, etc.)
There are CS places w/o kids menus (mostly pizza places) so kids eat what you eat.
Share your CS meals with the kids. We ordered a pizza combo, I ate the salad he ate the pizza and beverage and I saved the carrot cake for later.
We also shared an adult combo breakfast platter; a lot of food.
Use the grab and go area of your resort CS. That's where he found the PB&J as well as a apple slices/caramel dip dessert/side that he selected a couple of times.
I am also a believer in buffets. There's only one buffet at Disney under $10 for kids so on those days your CS and Snack are free for kids! Plan buffet meals so everyone gets to select some things that they like and the kids can eat anything on the buffet, not just the kids stuff.
