Crockpot Chicken

We're trying to eat more healthy so I'm trying to stay away from the cream of (insert name here) soups.

One recipe my children love is boneless chicken breasts with salsa. So simple and I use the leftovers in enchiladas.

Another one is chicken with pasta sauce and then you melt fat free shredded cheese at the end for chicken parm.

I have a programmable crockpot. I put my chicken in frozen and cook on low for 3 hours. It then stays on the "warm" cycle for aout 4 more hours and is done just perfectly.

I can vouch for this one:

Crockpot Chicken and Dumplings

4 skinless, boneless chicken breast halves
2 tablespoons butter
2 (10.75 ounce) cans condensed cream of chicken soup
1 onion, finely diced
2 (10 ounce) packages refrigerated biscuit dough, torn into pieces

Place the chicken, butter, soup, and onion in a slow cooker, and fill with enough water to cover.
Cover, and cook for 5 to 6 hours on High. About 30 minutes before serving, place the torn biscuit dough in the slow cooker. Cook until the dough is no longer raw in the center.

I just used this exact recipe last week- my very picky girls loved it and begged for it again this week!
 

I modified this recipe and I'm sure you could too!

2-4 chicken breast (I throw em in frozen)
1 jar salsa
1 can corn, drained (could leave out if you wanted)
1 diced tomato (again, could leave out if you wanted too)
1 can black beans, drained (we don't add this in)
1 block cream cheese

Put chicken breast on bottom of crockpot. Pour all ingredients except cream cheese on top of chicken. Cook 6-8 hrs on low. Shred chicken and return it to the crock pot. 30 mins. - 1 hr before serving, add the cream cheese. Serve with tortilla chips or over rice.

My family LOVES this recipe. You could leave the cream cheese out to make it healthier if you wanted but it would probably not be quite as thick.
 
I used equal parts Teriyaki glaze and BBQ sauce on chicken legs in the crockpot the other day and it was great. I've got a post going up about it on Thursday. You could use chicken breasts instead of legs.

This one also goes great rolled into soft tortillas to make burritos. I add a little shredded cheddar.

About how long does it take til the dough is no longer raw??
 
Right now I have 4 frozen chicken breasts, one package of taco seasoning and 2 cans of rotel. Cooking on low for 6-8 hours. When done, I'll shred it and use in tacos, burritos, or enchilladas.

This is what I do for my picky eater. DD7 doesn't like the tomatoes so after cooking, but before shredding one of the chicken breasts, I use a fork to scrape off the rotel. Then I shred annd keep in a separate bowl to use for her tacos. She doesn't mind the flavor but doesn't want to eat the 'red or green pieces'.
 
My easiest and by far most popular crock pot chicken recipe.

2lbs chicken breast & thighs (boneless, skinless) cut into cubes or strips
1 large can of green enchilada sauce
1 large can chopped green chiles
garlic powder
salt

Season chicken with garlic powder & salt. Mix chicken with 1/2 the sauce and full can of green chiles. Put in crockpot (I spray mine with Pam or use a liner). Cover chicken with remaining sauce. Cook on low 4-6 hours.

I use this chicken for EVERYTHING..but a few faves are below

Chicken enchiladas (fry corn torillas a few seconds on each side, fill with chicken and cheese, cover with additional green sauce & cheese-bake 20min

I have a picky family member that refuses to eat tomato "pieces" so before I add Rotel to my recipes, I put in a blender to eliminate the pieces and then add to the recipe. We love the flavor and no more pieces to worry about!
