With the weather outside being so cold and snowy it put me in the mood for soup.

INGREDIENTS:

1 cup diced ham
1 can (16 ounces) chickpeas
1 cup corn kernels
1/2 cup chopped onion
1 clove garlic, minced
1/2 cup diced carrots
1/2 cup diced celery
1 pkg. frozen chopped spinach, about 1 1/2 cups, thawed and squeezed dry
1 can (14.5 ounces) diced tomatoes
1 medium potato, diced
2 tablespoons chopped fresh parsley
4 cups chicken broth
1/2 cup elbow macaroni, cooked according to package directions
Grated Parmesan cheese

PREPARATION:

Combine all ingredients except macaroni and Parmesan cheese in slow cooker. Add a little water if chicken broth does not cover. Cook on high 1 hour, then switch to low 6 to 8 hours, or until vegetables are tender. 30 minutes before serving, add macaroni. Serve soup with Parmesan cheese sprinkled over the top or served on the side.
Makes 6 servings.

Your soup recipe sounds absolutely perfect for these cold days. I've printed it out, thanks a lot.

Sounds really good! Unfortunately, we don't have many cold days left, but I will still try this. I still haven't made very good use of my crockpot, so I'll be glad to have something to try in it. Thanks for sharing.
