I've been enjoying reading these recipes, so I thought it was time to add one of my own. My DD asked me to fix this for supper tonight, so it must be a winner!
CHICKEN FRICASSEE
3 lbs. cut up chicken pieces
2 t. salt
1 t. paprika
2 medium onions, sliced
1 stalk celery, sliced
3 carrots, peeled and sliced
1 bay leaf
1 c. chicken broth
1/2 c. flour
1/2 c. water
Season chicken with salt and paprika. Place sliced veggies and bay leaf in Crock Pot. Place chicken pieces on top of veggies. Pour in chicken broth. Cover and cook on low 8-12 hours or on high for 4-6 hours. One hour before serving, turn to High. Remove chicken pieces; bone and return meat to crock pot. Make a smooth paste of flour and water and stir into liquid in crock pot. Cover and cook until thickened. Serve over rice or noodles.
