Cooking Crock pot crazy

I've been enjoying reading these recipes, so I thought it was time to add one of my own. My DD asked me to fix this for supper tonight, so it must be a winner!

CHICKEN FRICASSEE

3 lbs. cut up chicken pieces
2 t. salt
1 t. paprika
2 medium onions, sliced
1 stalk celery, sliced
3 carrots, peeled and sliced
1 bay leaf
1 c. chicken broth
1/2 c. flour
1/2 c. water

Season chicken with salt and paprika. Place sliced veggies and bay leaf in Crock Pot. Place chicken pieces on top of veggies. Pour in chicken broth. Cover and cook on low 8-12 hours or on high for 4-6 hours. One hour before serving, turn to High. Remove chicken pieces; bone and return meat to crock pot. Make a smooth paste of flour and water and stir into liquid in crock pot. Cover and cook until thickened. Serve over rice or noodles.

I cannot thank everyone enough for this thread!!!

I really don't like to cook...and somehow get away with it since it's just DH & I. Just before Xmas, I bought a new crockpot w/ a removable crock & timer that switches to just "keep warm" if I'm not home from work yet. I had an OLD crockpot with none of those features, & didn't like to use it since I never know what time I'll be home from work.

This thread has been great! Even DH is getting into the crockpot now!!

We've made a chicken stew. beef stew, ribs (the EASIEST in the world -- DH made them - 3 ingredients!!), and today we just started chicken breasts with a jar of salsa. We'll serve it over noodles when done.

Everything has been DELICIOUS!!! And today, DH even said we need to have those ribs again soon. :teeth:

Here's a recipe that was rated one of the best of the year in our paper's food section. It's a little rich and certainly not healthy, but delicious. DH likes me to double all ingredients except the chicken so there's more sauce.

Creamy Italian Chicken

2 lbs. boneless, skinless chicken breasts
1/4 cup butter or margarine, melted
4 oz. of and 8 oz. tub of cream cheese and chives
1 (10 3/4 oz.) can golden cream of mushroom soup
1 (0.7 oz.) pkg. Italian dressing mix (this is the dry mix)
1/2 cup water or white wine
Angel hair pasta

Cut chicken breasts into strips and put chicken strips into slow cooker.
In a separate bowl, mix melted butter or margarine, cream cheese soup and Italian dressing mix together.
Pour mixture over chicken strips and add in white wine or water.
Cook on LOW for 6-8 hours.
Serve over cooked angel hair pasta.

Some notes: I season my chicken a little with garlic powder, salt and pepper. I've also put the chicken in frozen and it comes out fine. This recipe will taste good with water in place of the wine, but it's so much better with the wine.
I also cut my chicken into small chunks instead of strips. Sometimes I just do this with a spoon once the chicken has cooked.
We always serve this with garlic bread.

thought i might just post my fave beef stew one

1lb stew meat
1 can french onion soup - campbells
1 can beef broth - campbells
1/2 c chopped onion
1/2 c chopped carrots
cook all day -- during the last 30 or so minutes add dry pasta or rice.. Yum
serve with warm biscuts or bread

A HUGE thank you to Annemariec. I had posted earlier this week looking for this site. It was posted at Christmas, regarding candies. Oh thank you thank you. My elderly Mom has been talking about the PB balls from this site. I'll get those to her for M-Day. Forever grateful. :flower:

Thanks Chrismiss for the bump. It is almost soup weather--here's my favorite.
Chicken Corn Chowder
4 cups chicken breast,cooked and chopped
2 cups potatoes, peeled and diced
1 onion chopped fine
1 stalk celery, chopped fine
1 can cream corn
1 10oz. frozen corn
4 cups chicken broth-canned is fine
1 can evap. milk-I use non-fat
pepper
1/2 lb. bacon fried crisp, then crumbled
1/2 cup flour mixed with 1 cup milk
mix together the first 9 ingredients in your crockpot. Cook on low for 4 hours or until veggies are tender. Add the bacon, flour mixed with the milk, cook on high until soup thickens--another hour. I serve in bowls with shredded cheese and sliced green onions. Yummy!

I have used my crock pot a few times, but it looks like it is coming out of the cabinets tomorrow.

You are making me hungry.....sour cream....sounds good. I need to get my crock pot out now it is getting cooler....
 
oh man! i love soup and never thought of letting it cook all day in the crock pot!!! im so ready for fall!!

I tried Crockpot Helper-beef stroganoff last week. It was very good. I don't use Hamburger Helper, but there was a very good coupon for Crockpot Helper, so I took a chance. I will buy it again.

I made this tonight after doing a search "Crock pot" yesterday!
My company loved it!
I used 4 pounds of chicken and 1/2 of the package of dry Italian dressing mix and a big dollup of minced garlic....served it with a green salad and garlic bread from the freezer.
YUMMY!
 
I've just recently started Crock Pot Cooking and was so excited to come across this thread! I am a Room Mom for my DS Kindergarten class at least 2 days a week and I have been using the crock pot on those days to prepare dinner. I look forward to looking through all of these recipes!!!
