Creme Brulee tour.

The first time I had Creme Brulee was at the Concourse Steakhouse at the Contemporary. I thought it was wonderful, although I have nothing to compare it to. :D

I had it at Crystal Palace last month. Yum!

What is creme brulee?

Im probably not the best to answer this since I don't eat it that often, but it is a kind of custard with sugar on top that is torched with a blow torch (I think) so it is cooked and crispy...here is a recipe I found online that might help you.

Crème Brulee

1 1/4 quarts heavy cream
1/2oz. vanilla extract
8oz. sugar (split into 2 (4oz.) measurements)
10oz. egg yolks

In a saucepot on stove, heat heavy cream and vanilla extract with 4oz. of the sugar until it reaches a boil. Shut off. Meanwhile, while heating up the cream, in a separate bowl combine egg yolks with remaining 4oz. of sugar and mix together. Once mixed slowly, but rapidly whisk into egg yolk tempered cream mixture until fully combined, constantly shrink so eggs don't scramble. Next place mixture evenly into 12 (4oz.) ramekins and bake in oven at 325 degrees for 45-50 minutes. Take out and let cool overnight. Serve them by sprinkling a little granulated sugar on top of the dessert and with a torch flame the sugar so it turns brown. Enjoy

I love this thread. I don't know if I'll be able to forego my favorite desserts at some of these places, but sometime it would be fun to do "creme brulee" vacation. Thanks for all the suggestions, I'm keeping a list.

I had the creme brulee at CRT recently and I have to say, it was worth the $6.00. It was so good. Just looking at the picture makes me drool!

Oogieboogie,
Is that supposed to be the creme brulee at CRT? It looks like coffee and biscotti. When I had the creme brulee at CRT it looked like a traditional creme brulee in the custard dish. Just wondering if they dramatically changed the presentation?????????

That's the creme brulee, served coffee service - they put it in the espresso cup, some biscotti and a chocolate spoon! Heaven!
