Creamed celery..

Have you ever eaten - or prepared - creamed celery?

With all of my Amish reading, it seems that in many of the Old Orders, one of the traditional dishes that must be served at the wedding feast is creamed celery.. (In other Orders, just the raw celery - leafy side up - is placed in jars or vases as table decorations.. And in yet other Orders, they may do both! :) )

Now - I don't care for raw celery - and I'm not particularly fond of it when it's in stews and such - but, I love cream of celery soup.. (Odd - huh?) LOL..

So is this "creamed celery" dish they speak of anything like cream of celery soup? If so, I might just try to whip up a small batch..:goodvibes
 
I cook a recipe called "celery casserole". Celery is the main ingredient, it is fake creamy though (soup base). I am sure it is not what the Amish make, but cooked celery in a casserole is very good. It takes the bitterness away.
 
My mom used to cook up some celery (and carrots) and mix them in a white sauce. Perhaps its something like that?
