Cooking soups and carbs question

I'm on keto and I try to keep my carb intake at 18g of carbs per day. I also love soups and I want them to be incorporated my diet more. Items like onions, tomatoes, carrots among other things all have a decent amount of carbs in them so I can't really use too many of them. The problem is that I LOVE onions in my soups.

I was thinking about making a chicken noodle-like soup, without the noodles of course, and cooking it with all the usual things I like to use like onions, celery, mint, roma tomatoes and carrots, and then straining them out so the flavor is still there but I'm not eating the actual thing. So what would be left is broth, and I'll add the chicken in, with some avocado. The problem is, I'm not sure if any of the carbs have been transferred into the broth or not. Or maybe it's just some. Does anyone have an idea?
 
No, the carbs probably won't "transfer", but if I can offer a suggestion...just eat the soup the way you like it. You really should have more than 18g of carbs per day, it's not long term healthy (or really short term for that matter). Your body uses carbs and needs them. Veggies also offer other nutrients your body needs.
 

I know you did not mention other veggies what about the cabbage soup. I know there is a lot to add the veggies you use to that as well. Not sure about the carb intake. have you looked online under the pintrest? there maybe so many recipes with the ingredients you have as well under the keto diet. Hmmm....I may have to make some cabbage soup now...hope that helps a little. I like the site for different recipes.
 
My suggestion is to make the soup as you like. Strain the soup of the veggies and then look up the amount of carbs (from a variety of websites) in a serving of vegetable broth or chicken broth, to get an average idea of the amount of carbs. As a broth is the liquid soup part with the solids strained out. Also know, you don't have to drink/eat all the soup. I tend to use the soup/liquid part for making the soup and then just add just enough to my bowl for flavoring. I don't drink a lot of the broth.

No one judged you. They gave you their opinions and advice about what to eat, which is what you asked for. You didn't like all of their advice, but that's typical when you ask for advice on these boards. Some replies you'll like, others you won't. No one was saying there is anything wrong with you at all.
 
As long as you leave out the potatoes you should be fine. Most other veggies are low in carbs, but if you've ever looked at sliced potatoes as you put them on to boil, you'll see starch in the water. Not sure if that would strain out or not.
 
Vegetables will leach out a negligible amount of carbs into broth. Its not enough worth worrying about, probably 1-2 grams per cup, depending on how many veggies are in there. ALL commercial broth and stock is made using veggies (most commonly onions, carrots, celery). They all have around 1g carbs per serving.

Just don't add any potatoes or pasta and you will be fine.

I am trying keto also. I have read that the carbs do get into your broth. I've found so many options on pinterest. You can search for keto soup or specific soups if there's something you're craving. I found a chicken soup that's creamy rather than brothy that's very good. It has cauliflower rice in it to thicken it up and make it more hearty. 1 cup only has 5 net carbs and it's very filling. I like to make up the recipe and put in the refrigerator in 1 cup portions. It's very easy to heat quickly and have something good to eat. I have a lot of others pinned, but haven't tried them yet. There's a white chicken chili that looks very good.

The OP was not asking for opinions or advice on what to eat in general- they were very specific in their request which related to Keto, low carb and its potential transfer to the broth - so no the response you are referring to is not what OP asked for at all.

Yes many of us are - but I also wonder why people feel a need to comment or impose an opinion if they have no knowledge on the subject - after reading the thread title or the OPs post and they don't have the knowledge required to answer - they can simply move along.

You really should have more than 18g of carbs per day, it's not long term healthy (or really short term for that matter). Your body uses carbs and needs them. Veggies also offer other nutrients your body needs.

I understand you are basing your advice on your personal experience and generally accepted dietary guidelines. This person is eating carbs and at a level that is being recommended by many doctors in order to reverse chronic illnesses that have arisen from the overconsumption of carbs/sugar in the western diet. Many people are eating more carbs than even an elite athlete would need - hence the obesity epidemic and other chronic illnesses. I previously may have agreed with you but health needs, doctor recommendation and personal research currently sees me following the Keto diet as well. So I would say the OP should follow a diet they and their health care professional are comfortable with.

Hope you are seeing some of your desired effects of Keto :-) My doctor recommended this website, the link I provided is one that has some soup options for you https://www.dietdoctor.com/?s=soup including a chicken no-noodle soup at only 4net grams of carbs. All the recipes on the website have free access - there are some other functions that only members can access. Hope you find some recipes you like.

Oh brother... People get so touchy with these things. I answered the OP question, you just chose to cut that out in your quote of my response. If it offended OP, my apology, didn't intend for it to be upsetting to suggest that eating veggies is OK and healthy.

I'm into health and nutrition, so these topics interest me. You're right, many westerners eat far too many carbs. Absolutely agree. But IMO from all I know of it, swinging the pendulum to the opposite extreme is not a long term healthy or sustainable solution. Learning and practicing healthy macro balance of proteins, fats and carbs too is key.

My intent was to offer an alternative suggestion to help being healthy, I find it concerning if someone is so worried about carbs that they won't even eat veggies. If that's seen as judgmental, so be it I guess. OP can do what they wish, it's not my nutrition.
 
I’d make the soup with the carrots but I wouldn’t eat them. Carrots have a lot of carbs/sugar. Maybe add some veggies that are lower in carbs like spinach, etc.
 
I would make the soup with the veggies, and I would substitute scallion for the onion. It would still give that onion flavor with much less carbs.
I would also go light on the higher carb veggies and heavier on the chicken.

You could use mushrooms, tomatoes, celery, zucchini, spinach.
There are many low carb veggies you can use for flavor and you don't have to strain them out.
