I'm on keto and I try to keep my carb intake at 18g of carbs per day. I also love soups and I want them to be incorporated my diet more. Items like onions, tomatoes, carrots among other things all have a decent amount of carbs in them so I can't really use too many of them. The problem is that I LOVE onions in my soups.
I was thinking about making a chicken noodle-like soup, without the noodles of course, and cooking it with all the usual things I like to use like onions, celery, mint, roma tomatoes and carrots, and then straining them out so the flavor is still there but I'm not eating the actual thing. So what would be left is broth, and I'll add the chicken in, with some avocado. The problem is, I'm not sure if any of the carbs have been transferred into the broth or not. Or maybe it's just some. Does anyone have an idea?
