There are three deluxe resorts that are on the monorail: Grand Floridian, Polynesian, Contemporary. You can also walk to the Contemporary from the MK, or take a boat from GF or Poly to MK.
You can get to MK and Epcot via the monorail; regardless of where you stay, you'll be taking bus service to AK, MGM, DTD, and the water parks.
For ease of getting back to your room from MK, you can't beat the Contemporary. It's a 10 minute walk, and it's the first stop on the resort monorail line when you leave MK. If you prefer the theming at the GF or Poly, it's only a few minutes longer to get there by monorail or boat.
One really nice thing about being on the monorail line is the quick access to the other monorail resorts. That opens up a whole range of dining choices that are just minutes away.
Oh, and you can also catch a boat from CR to the Wilderness Lodge and the Fort Wilderness Campground. Even more dining choices, and there are lots of fun activities at FW, like horseback riding, movies, campfires, and the Hoop-De-Doo Revue.
