;) So, we are still in the "Disney Downer" stage from our land and sea trip that ended less than a week ago. I just cannot seem to get out of Disney mode. For dinner last night, I tried one of our favorite dishes from the Poly. It was their coconut and almond chicken. I just tried my hand at it, no recipe. It was WONDERFUL! I felt like we were there again! I dipped pounded chicken into flour, then egg mixed with coconut milk, and then coconut and almonds. I then fried it in oil in a skillet. YUMMO!!!!! If you are missing Disney, you might want to try it!

Do you toast the coconut before breading? Do you use a dipping sauce?
 
We did not toast the coconut before had. You really don't need a dipping sauce. I think they had some kind of sauce there, but we really didn't need it. Kristi
