We want to bring M&M tubes full of quarters and pennies to WDW for doing pressed pennies. Can we put them in our carry-on bags? Will we get grief from security if we do? 

Should be fine. They can see through the scanners what it is.
I would pull it out and put it in the bin. That way they don't have to search through your carry on.

I am going to Vegas with all of my sisters next week and being the "frugal" (OK, cheap) Accountant that I am, I have rolls of quarters, dimes and nickels in my carry on for the slot machines
. Glad to know that it won't cause a problem. I think I'll put them all in a ziploc and take them out of the bag to prevent any "issues".

VERY seriously though - most machines don't even have coin slots any more. They accept bills and disburse tickets showing your winnings (or, for the more realistic, remaining money). You can then cash in the tickets at machines throughout the casino, or at the Cashier's Cage.
Even there, they only accept two denominations of coins. If you have time, I can find out which two - I think it's quarters & nickels and they won't even accept pennies & dimes.
Really, your best move would be to change the money into bills at home. It'll be easier (lighter) to carry, too!
