Instead of a coffee maker I'd get a single cup French press. I think it makes better coffee than a peculator or drip coffee maker and it is smaller and would be easier to get back home.

Got one of them at the World of Disney store - it makes a great souvenir as well.

I'll second the earlier mention of the Starbucks VIA packs, that's what we'll be bringing in 3 weeks along with a small heater pot and disposable insulated coffee cups. We're rope droppers so that doesn't leave time for morning hikes to the food court. On the last trip we brought our actual coffee machine and an extension cord.
