Cloud Bread, anyone tried it or made it?

I've made cloud bread. It's actually really good and I hate cottage cheese. It's fluffy but works well for a sandwich.

I never heard of it, I looked at the link and it says--- In fact, its only made up of four magical ingredients—eggs, cream cheese, cream of tartar, and a pack of sweetener.

So your comment about cottage cheese threw me for a loop? I love cottage cheese, but I don't like cream cheese very much!

It doesn't taste like cream cheese. I make it with cream cheese. I also leave out the sweetener but add spices, I like it more savory.

If you aren't a fan of artificial sweeteners you can use honey.

The most important thing is to let it sit, sealed in an air tight container over night so it takes on a more bread like consistency.

I use the 1/3 less fat cream cheese and I have used the flavored ones.

The recipe I use calls for cottage cheese rather than cream cheese. I hate cheese in general.

Thanks for over night storage tip.
What spices do you use? :)

I've made it with the onion and chive cream cheese and the garden vegetable cream cheese (the 1/3 less fat kind)

I have added sesame seeds to the top. I've used onion powder, garlic powder, rosemary. thyme, chives, and minced onions. Alone, or in combinations. I've also added honey to make it sweet. I'm not a fan of Splenda or Stevia, I've tried baking with them, but it always taste chemical-ish.

I'm trying to think of a way to add cheese now.

I just watched a video on making cloud bread - had never heard of it, but I intend to try it - will also take the tip to let it refrigerate all night for better texture.

I can't open your recipe, either, but here is mine.

3 eggs, separated
3 tbs cream cheese (whatever kind you like/have)
1/4 tsp cream of tartar

Dried spices (whatever you like) to taste

Beat together cream cheese, egg yolks and spices until fully combined.

Whip egg whites and cream of tartar until stiff peaks form

Fold together whites and yolks, being careful not to break the whites. Spread in 8-10 rounds on greased cookie sheet and bake at 300 for 30 minutes until golden brown.

I haven't tried this yet, but have seen cloud bread recipes floating around on Pinterest for a while. I'm glad to hear some positive reviews - I may try it this weekend! We make a low carb pizza crust out of eggs, cream cheese, and mozzarella cheese plus spices, and it's amazing, so I think I'll like this!

PS for any of you that want to use sweetener for baking (or just every day use) but don't like stevia, PLEASE check out Swerve. The only place I can find it in town is Whole Foods, but it's amazing. They even make a confectioner's Swerve (for icings!) - not grainy or chemical tasting at all. It's delicious!!!!

Of course!!

She did a test of all the "low carb" pizza crust recipes to find which one she thought was the best :o we also tried the almond meal one and the cauliflower one, but the cream cheese crust was our favorite. My husband is a New Yorker and he was very scared of crust made from anything but bread - but he loves the cream cheese one. We aren't fans of cauliflower (it just didn't TASTE right), and the almond meal crust was more like a cracker.

Thank you! We hate anything made with almond meal. It's always gritty and never comes out right.
