Cinco de Mayo....what's for dinner??

Anyone having Mexican fare tonight? I am looking for some good Mexican recipes! Tired of the usual tacos and burritos. Anyone have something yummy to share?
 
I received a text from DS16 say "we better be having tacos tonight!:lmao:"

So I guess I'll be nice and stop at the store on my way home tonight to get stuff for tacos, and maybe a margarita for mom:rolleyes1.

Do we do anything that is a Canada Holiday??

I'm in Texas - I don't want Mexicans mad at me but I really can't figure out why the USA parties for this

I am not having a party or celebrating just using it as an excuse to have something Mexican.
 

Earlier this week we had salsa chicken with spanish rice. Sprinkle taco seasoning on both sides of the chicken breast, top with a couple tablespoons of salsa, and bake as usual. 5 minutes before its done put some shredded cheese on it. You can top with sour cream if you like, before serving.
 
:headache: If I had realized that today is Cinco de Mayo, I would have made tacos or something.:headache: Too late, I already made sauce and meatballs, which are cooking in the crockpot now. Oh well.
 
We do quesadillas a lot but I am working on making DS a less picky eater so we will be doing turkey tacos (I don't eat beef and I found the recipe online)...I got a package with both soft and crunchy tacos. However, due to a defrosting snafu with the pizza dough I was planning to make last night, we are having pizza tonight and will do the tacos tomorrow instead! Ah well...

Exactly this. I also have beignets and chickory coffee during Mardi Gras. Just fun to go with a theme.
 
We will be having nachos for the kiddos and DH, taco salad for me :) yum
great food in and of itself is a reason to celebrate with our neighbors to the south. :goodvibes
 
We went out for Mexican last night. It was my Aunt's birthday and that was where she wanted to go. I had a wonderful frozen strawberry margarita and enchiladas. SO tonight we are doing boring old pork chops.
 
Fish tacos, Mexican rice and black beans. I'm hoping DH will make margaritas too :thumbsup2
 
We aren't having it tonight, but last week I made enchiladas.

I sliced chicken pretty thin seasoned it with salt, pepper and papkria, then simmered it with minced garlic and onion and half a can of Rotel in chicken broth. (I just scooped the rotel out of the can, leaving all the juice with the second half). When the chicken was pretty tender, I mixed in a little mozzarella cheese. I filled tortillas and put them in a 9x13 baking dish. Then I made "cheese dip" with Velveeta and the rest of the Rotel. I poured this over the top, then baked it at 350 for 20 minutes or so.

I hope you have a fun Mexican meal tonight. We have dinner plans with friends tonight, or we would have Mexican tonight too!

Been in Mexico for 4th of July-nada, lol. No celebrations there. We party for Cinco de mayo just for an excuse to party :goodvibes

The analogy doesn't really hold though, since it's not Mexico's independence day today.
 
We've found that the best thing is burgers and fries or pub food.

A few years ago we attempted to go out for St. Patrick's Day. Ended up at a Mexican restaurant. So now it's tradition - Mexican for St. Pat's and we usually go to an Irish pub for Cinco de Mayo. If we're at home, we grill burgers.

Works really well!

True though, cinco de mayo is a celebration of a big battle won in Mexico, if we want to get technical. I dont know, but I ve heard its celebrated more here than in Mexico??? Anyway, lets just eat some Mexican food and celebrate anyway, what's it hurt?

I was thinking chicken enchiladas possibly, spanish rice, and I dont know, Ill keep reading this thread.:goodvibes
 
Nothing outlandish, taco pizza for dinner.

1 lb ground beef or turkey
taco seasoning
1/4 cup cheese con queso
prepared pizza crust (like Boboli)
toppings: chopped tomatoes or salsa, chopped onions (any), sliced black olives, shredded cheese, shredded lettuce, sour cream, etc.

Prepare meat with seasoning according to package directions. Smear the cheese con queso on the crust as "sauce". Top with ground meat. Layer oven friendly ingredients (onions, olives, tomatoes) and bake according to directions for crust (425F for 10 minutes?). Top with lettuce and sour cream and more.

I haven't tried baking this with the lettuce already on, afraid it would burn or wilt.
