Cinco de Mayo....what's for dinner??

It's my 10th wedding anniversary, so we are going to McCormick & Schmicks for dinner. Probably not having Mexican.
 
I am not having a party or celebrating just using it as an excuse to have something Mexican.

Here, here!!! I had to ask my Mexican sister-in-law what the holiday actually was so I could actually KNOW about what I was already celebrating! :lmao:
 
Chicken tacos and pineapple margaritas! :cool1:

PINEAPPLY MARGARITAS?!?!!!! Why oh why have I never heard of this??? :confused: Do you have a recipe? Is it something I could order from a restaurant/bar?
 
Salsa chicken in the crockpot with black beans and sour cream, to be served in flour tortillas. Not fancy, just trying to cook what I have on hand.
 

Having a chicken enchilada bake thing here mmmmmmmmmmm

Ingredients
1 cup fat-free, less-sodium chicken broth
2 (4.5-ounce) cans chopped green chiles, divided
1 3/4 pounds skinned, boned chicken breasts
2 teaspoons olive oil
1 cup chopped onion
1 cup evaporated skim milk
1 cup (4 ounces) shredded Monterey Jack cheese
1/4 cup (2 ounces) tub-style light cream cheese
1 (10-ounce) can enchilada sauce
12 (6-inch) corn tortillas
Cooking spray
1/2 cup (2 ounces) shredded reduced-fat extra-sharp cheddar cheese
1 ounce tortilla chips, crushed (about 6 chips)

Preparation
Combine broth and 1 can of chiles in a large skillet; bring to a boil. Add chicken; reduce heat, and simmer 15 minutes or until chicken is done, turning chicken once. Remove chicken from cooking liquid, reserving cooking liquid; cool chicken. Shred meat with two forks, and set aside.

Preheat oven to 350°.

Heat oil in a large nonstick skillet over medium-high heat. Add 1 can of chiles and onion; sauté 3 minutes or until soft. Add reserved cooking liquid, milk, Monterey Jack, cream cheese, and enchilada sauce; stir well. Stir in shredded chicken; cook 2 minutes. Remove from heat.

Place 4 tortillas in the bottom of a 2-quart casserole coated with cooking spray. Spoon 2 cups chicken mixture over tortillas. Repeat layers twice, ending with chicken mixture. Sprinkle with cheddar cheese and chips. Bake at 350° for 30 minutes or until thoroughly heated. Let stand 10 minutes before serving.
 
I'm making chimichangas with rice and beans on the side.

PS whenever anyone says fish tacos it always makes me :rotfl:. I know its a real thing but I always think of the dirty meaning.:rotfl2:
 
Sweet shredded pork tacos with cilantro ranch dressing from this site: www.athriftymom.com Pork loin is in the crockpot now. I hope they are as good as they look because I used a four pound roast!

At my house any excuse to have Mexican food is an acceptable reason!:dance3:
 
Papa Murphy's pizza put out a coupon today for their new taco pizza. It's only $5.55 for a large. So, I'm going to buy 3 of them and freeze 2. I don't celebrate Cinco de Mayo (not mexican) just like I don't celebrate St. Patty's day (not Irish), but my family loves taco pizza.

No, Mexicans don't acknowledge Independence Day, nor do Europeans. They also don't celebrate Thanksgiving. Totally American holidays.;)

We're having the exact same meal tonight. Local grocery store had the big packages of Gorton's Fish Sticks (the good ones that aren't minced) on sale 2 for $8 with a free package of Ortega Taco Shells, and there was a $1 off coupon for the fish sticks on the taco shell package. Couldn't beat that deal. Now let's see if I can persuade my kids to eat them!
 
I ended up making a pot of steak chili! Hope it tastes good, its my first time making it! I am also making cheddar bisquits to go with.
 
Salad
romaine lettuce, tomatoes
salsa/ranch dressing
shredded cheddar
seasoned ground beef (cumin and cayenne)
olives
"seasoned corn" (Birdseye, has corn, onion, peppers)
Chopped green onions
sour cream
black beans

Warmed corn tortillas on the side.

And I'm having margaritas. :banana::banana::banana:

Not because it's cinco de mayo. Just because that was what was in the fridge for dinner this week, and I made the tilapia yesterday!

Do we do anything that is a Canada Holiday??

I was once in London on the 4th of July - they had fireworks :cool2: I believe they were put on by the expat community. Everyone thought they were great fun, and enjoyed them!

Thinking is much more global these days, and I'm all for celebrating holidays of other countries, esp. when there are strong expat communities in the area. More reasons to have fun :cool1:

And "Canadian Thanksgiving" is gaining a lot of stream around here!

We combined our Cinco de Mayo celebration with a Three Caballeros theme night. On the mennu was chicken fajitas, beef tacos, spanish rice, refried and baked beans and sweet corn cake. Dessert was red, white and green cupcakes to represent the Mexican flag.
 
Well since Thursday night is normally pizza night it was Taco Pizza from Papa Murphy's
