Magic Kingdom will have all their decor up as MVMCP will be up and running. As you get closer to Thanksgiving the resorts will start coming online. You may just wake up one morning and your resort will have been transformed overnight. I'm assuming Christmas decor will be up at DHS since the Osborne lights will already be in full swing. Epcot will probably be one of the last parks to get their decorations up and it might not happen until after you leave. It seems to vary from year to year.
We were at AKL in 2012 and if I remember correctly, the resort was fully decorated about a week before Thanksgiving. Just as a pp said, it happened overnight.

Normally the big Christmas tree is not up, but I think you are going to get lucky, because it might be up this time because it sounds like the parade is going to be taped early. The tree being up makes for some great photos of the tree with the castle in the background.

Both MK and DHS were decorated when we got there last year (11/14 - 11/19). Epcot was once F & W ended. The resorts were in the process. The gingerbread house in GF was going up but hadn't open. However staying the same week a few years before it was open before we left.
