Just wondering if we leave the park for dinner on Christmas Day will we have a problem getting back in due to capacity?

Possibly.

If Disney closes due to capacity of its own accord, they will allow guests with tickets and hand stamps to re-enter the park. However, if they are closed by the fire marshall due to capacity, then not even cast members are allowed into the park.

Since they try and accomodate park hoppers to help spread the crowds around, Disney prefers to allow guests with hand stamps back into the park even when there are capacity issues. But as with any other situation of this nature, it really depends. Personally, if getting back in is really important, I'd try and change my dinner plans to someplace inside the park.
 
After dinner it's unlikely to have capacity issues unless it's new years eve. Fire Marshall closing th parks due to Capacity typically occur in the afternoon and are usually lifted after a good chunk of people leave after the parade. capacity happens in stages so there will be some warning signs like "everyone including annual passholders need a stamp to reenter" or "one day passes aren't being sold".
