Christmas breakfast, whatcha making?

We have "Christmas Cereal" we all pick out any box of cereal we want. (something the kids never get to do) and they think its the coolest thing, dd can't wait to open her lucky charms. LOL Since dh was a kid he always got Coco Rice Krispies and I pick...Cinn. Toast Crunch. Then after we have all had our first bowl. We mix the cereals together for a new cereal. LOL

Gosh, we aren't very gorment..I hear some of these meals you people have planned, they sound amazing...
Christmas Dinner, we have Lasanga. lol Not too fancy!!
 
We go to my parents and they make

Eggs over easy
bacon
sausage
home fries
english muffins
corn beef hash
oj
coffee
 
We make a breakfast casserole every year. Throw it in the oven before we start opening presents. It takes about an hour to cook, by then the presents are open and everyone is hungry:

Preheat oven to 350-375.
Line a baking pan with tinfoil.
Spray with Pam.
Dump 1 bag of tater tots in bottom of pan. (Thaw them first if possible).
Add pre-cooked bacon, ham and/or sausage. Crumbled up.
Scramble about 10 or so eggs and pour over the top.
Cook for about 1 hour or until eggs are set.
Take out of oven and add grated cheddar cheese to top, cover with foil and let melt.

It's yummy & filling, easy to make and cooks while opening presents!:thumbsup2
 

I love Christmas breakfast! I did have a lot of things planned to make until a sudden switch in plans has us now spending the night Christmas Eve at my in-laws house, which means no cooking for me the next morning as they prefer to do an early lunch. :rolleyes:

So we'll save our breakfast plans for another day during the week.

I'll make a sausage and egg breakfast casserole, a hashbrown casserole and the breakfast lasagna recipe from Crystal Palace. YUM. :)
 
We already made these pancakes. They are in the freezer, and on Christmas morning all we have to do is heat them in the oven.

Make Ahead Gingerbread Pancakes

1 Tbsp. cinnamon
1 Tbsp. ginger
4 cups buttermilk pancake mix, complete
2 1/3 c. water mixed with 1/2 c. molasses

Stir spices into pancake mix, then add the molasses mixture until just moistened. Heat lightly oiled non-stick skillet over medium heat. Drop 3 Tbsp. for each pancake on the skillet. Cook 4-5 minutes, turning once, until puffed and lightly browned. Cool on wire racks, then freeze on cookie sheets until firm. Freeze in airtight container with waxed paper between layers.

To serve: Heat oven to 350. Place frozen pancakes directly on oven racks. Bake about 5 minutes or until hot.

We like to use Reddi-Whip with these pancakes.

Our Christmas breakfast tradition is Mimosas, Pranline Baked French Toast & bacon. The french toast is an overnight dish I pop in the oven while we open gifts. And I thorw the bacon in the oven on a baking sheet too! Quick, easy & so tasty!

Praline Baked French Toast
6 tablespoons Butter
1 cup Light Brown Sugar
2 tablespoons Light Corn Syrup
1/2 cup chopped Pecans
2 Eggs, plus 3 Egg Whites
1 cup Orange Juice
1/4 cup Sugar
1/3 cup Milk
1 teaspoon grated Orange Rind
1/2 teaspoon Cinnamon
1 teaspoon Vanilla
1 (16 oz) loaf French Bread, cut into 12 to 15 (1 inch) slices

In a microwaveable dish, combine butter, brown sugar & corn syrup. Microwave until the butter has melted & the brown sugar is dissolved, about 1 minute. Pour the mixture into an ungreased 3 quart oblong baking dish or a 13 x 9 inch pan. Sprinkle with pecans.
In a large bowl, whisk together the eggs, egg whites, orange juice, sugar, milk, orange rind, cinnamon & vanilla.
Arrange the bread slices over the brown sugar mixture & pecans in the dish. Pour the egg mixture over the bread slices. Cover & refrigerate for at least 4 hours to overnight.
Preheat the oven to 350 degrees.
Bake for about 30 minutes or until toasty. Serve immediately, each piece with some of the praline sauce that forms on the bottom of the dish.
 
DSister hasn't decided what time dinner is on Christmas. Heck, she let me know this week she isn't sure she will be hosting. She has ordered the meat, so we are okay no matter what.

For breakfast I will be making Breakfast Pie for the first time for DH and myself. DD won't go near eggs, not sure if she will try it or not. I am hoping she will. I had found a recipe almost exact to the one previously posted. I will also make Pecan French Toast. This is a good recipe and I know DD loves it.

My plan is to make the PC mini cinnamon rolls and some sort of egg casserole. My youngest doesn't dare touch eggs so he'll have Eggo's like he does nearly every morning. Something fairly quick so we can be on the road to family by 1pm.
 
12 slices day old bread (NOT the Wonder Bread type..I use Italian or French)
8 ozs. butter, chilled and sliced

Brown Sugar Batch
9 ozs. light brown sugar
1 tsp cinnamon
Mix the 2 and set aside

Batter
10 ozs. heavy cream
4 large eggs
1/2 tsp vanilla
1/4 tsp cinnamon

Mix together and chill

Spray loaf pan with pam. Layer 3 slices bread on bottom. Sprinkle 1/3 brown sugar mix, then 1/3 of the butter. Repeat 2 more times. Top off with 3 slices bread

Press down to compact

SLOWLY pour batter over top (use a butter knife or small spatula to help get it into the corners and down the sides if necessary)
Cover completely

Cover with parchment paper then foil (I don't normally use parchment paper, but did the first time..still worked fine the second time not using it)..
Refrigerate overnite
Heat oven to 325
Bake 1 hour, then uncover and bake 15 minutes more..Remove from oven and let rest 5-10 min

Invert and slice to serve

Enjoy!!

Italy is our country this year so I had planned on having Panetonne french toast ( ok I know... but it sounded good!)


Now my husband and mum have ganged up on me and requested I make the Stollen wreath that I used to make years ago. So it looks like we will have that as well.

As long as I can make stuff ahead I am ok with it.

We are going to the IL's for Christmas, so we won't be cooking. They usually do a regular American breakfast- eggs, toast, bacon.

I did try a GREAT panettone bread pudding recipe yesterday- it is awesome for breakfast, since it has 2 warm sauces with it (one is a cinnamon syrup, and the other is a creamy Amaretto sauce).

Honestly? We usually just eat Christmas cookies and any breads/loaves we got as gifts. DH and DS are not big breakfast eaters, but DD and I are. After reading this thread, however, I'm going to try the breakfast pie this year. Thanks for the recipe!:thumbsup2
 
ok breakfast pie is going in the fridge soon.

I used my new magic bullet to mix the eggs :rotfl2: :rotfl2:

I made 2 pounds of bacon :scared1: some went to that, some went to the penne rustica that I am making for dinner and I am sure the rest will be gone by noon tomorrow. that was really good bacon!


I decided not to make the bread this year. maybe for New Years. I spent all of yesterday in the kitchen making cookies for the fireman ( a little tradition, we take them a big plate of cookies every year they seem to really love it :) ) and other assorted goodies.


so it will be the breakfast pie and Pannetonne egg toast.

I just put my French Bread Loaf in the frig to stay overnight. I hope I didn't mess up, but I just couldn't go with 8oz of butter, cut it by about a third (like that really helps):rotfl:Anyway, can't wait to try it in the morning! MERRY CHRISTMAS EVERYONE!!!:santa:
