...for two nights. Hubby & I left the kids with grandparents! Not doing the parks. How would you spend two days & two nights?? Was thinking maybe Disney boardwalk & take a drive to Cocoa Beach tomorrow afternoon..?

I would take a monorail resort tour to see all of the wonderful Christmas decorations and also wander Disney Springs for a bit. The Boardwalk is nice but the only draw it has for us is Flying Fish.
 
The Boardwalk in the evening is fun and there are lots of good restaurants around at the five different resorts in the area. We also like stopping into Ample Hills for ice cream and watching Illluminations from the bridge between BWI and BC. You could also play Fantasia mini-golf if you are up to it.

Disney Springs is fun, but pretty crowded this week.

A monorail tour is also a lot of fun. My DS and I did this just last week. We started at Poly for a drink and apps at Trader Sam's, went to GF to see the gingerbread house and then went to Cali Grill at CR for dinner (you could just go up to the lounge if you don't have a reservation.) The Christmas decorations are beautiful.

Any guest can ride the Monorail. A ticket or a resort stay is not necessary.

You can access the Monorail at Epcot, the TTC, Poly, GFla, MK, or Contemporary.
 
I spent yesterday afternoon doing the gingerbread/decoration thing. We parked at yacht club saw there, and walked over to beachclub and back. We skipped boardwalk. Then we drove over to GF and did there, monorail to contemporary, boat to wilderness lodge, boat to MK, monorail to poly for dole whips and fireworks then walked over to the car at GF.

We would have added dinner but we did a afternoon holiday meal for xmas before we started our adventure and weren't really hungry and the dole whips took the edge off. It sounds like a lot of waiting for things but it was a great time to just relax, enjoy not being in the parks and taking in the holiday for us.

To be honest, as adults enjoying your time together you can't really go wrong picking any specific place to start a peaceful journey that is more than a meal somewhere around property. Now if there is somethign more specific like dancing or music then there is less locations to aim for in the adventure.

some hint in what you want/like other than no theme parks would be helpful.
