Going on our first DCL. How strict are they with children's ages at the Edge (ages 11-14)? I have two kids that are 14 months apart. One will be 12 when we go and the other 10 (turning 11 the following month).

Oceaneer's Club/Lab is ages 3-12, Edge is ages 11-14.
It's up to the CMs onboard whether they will allow your 10 year old to "age up" and attend Edge. Mostly dependent on how many kids in the correct age range (11-14) are onboard. If the complement of 11-14 year olds onboard fills up the Edge space, then the younger one, most likely won't be allowed to.
But, as I said, it's up to the CMs onboard. So, ask at Edge whether it will be allowed once you board.
I'll just point out that they both can be together (with no waivers) in Oceaneer's.
