Chicken & Brie Recipe

I got some brie cheese b/c it's SO yummy (I usually make an appetizer w/it) yet I don't know what to make with it dinner-wise--preferably w/chicken b/c it's what I have on hand) but I'll make an exception if you have a great recipe using another meat.

Any suggestions? Allrecipes.com's recipes that incorporated those ingredients two didn't get great reviews.

Garlic Butter and Brie Chicken

SERVES 2

Ingredients
2 chicken breast fillets, trimmed
4 tablespoons garlic butter
30 g brie cheese, sliced
1 cup cornflake crumbs or breadcrumbs

Directions
  1. Turn oven on to around 200 degrees celsius.
  2. Line baking tray with baking paper.
  3. Make approx 3 inch cut in thick side of chicken fillets to make a pocket, but don't cut right through.
  4. Fill pockets with brie.
  5. Pour breadcrumbs/cornflake crumbs onto a plate.
  6. Roll chicken in crumbs until coated - it doesn't have to be perfect, a few missed bits won't hurt.
  7. Place crumbed chicken onto baking paper on baking tray.
  8. Put 4 teaspoons of garlic butter onto each chicken fillet, or more if you like.
  9. Bake for 20 - 30 minutes, depending on the thickness of the fillets.

Brie Topped Dijon Chicken Breasts

SERVES 6

Ingredients

Honey Dijon Sauce
1/3 cup honey
3 tablespoons Dijon mustard
3 tablespoons meaux mustard
Chicken
1/4 cup Dijon mustard
1 tablespoon lemon juice
1 egg, beaten
1/4 teaspoon ground black pepper
6 boneless skinless chicken breast halves
2/3 cup fine dry breadcrumb
1/4 cup butter
6 ounces canadian brie cheese

Directions

  1. Preheat oven to 350 degrees.
  2. Combine Dijon mustard, lemon juice, egg and pepper.
  3. Brush chicken with mustard mixture.
  4. Coat with bread-crumbs.
  5. Melt butter in large frypan.
  6. Sauté chicken until golden on both sides.
  7. Place on baking sheet.
  8. Cut Brie cheese into thin slices.
  9. Place on top of chicken.
  10. Bake in oven for 10 minutes or until cheese is melted and chicken is cooked through.
  11. To serve, mix Honey Dijon Sauce and spoon over each chicken breast.

As soon as I make one/both of these, I'll post how it/they turned out. If anyone makes one before I do, let me know how it turned out!
 
I thought those 2 and the one with peaches sounded really good
