Chicken Fajtas ala Foreman
Ingredients:
Boneless, skinless chicken breast cut into strips
a handful of your favorite spices (we like garlic, salt and pepper on ours)
1 package burrito-size flour tortillas
3 large green bell peppers, cut into strips
1 large yellow or white onion, diced
Sour Cream
Pace picante sauce (if you want)
Shredded cheese (we like cheddar or Mexican blend)
Sliced, pickled jalapenos (if you want)
Guacamole (if you want)
Sprinkle the spices on the chicken strips and rub in good. Then cook until no longer pink in the center and outside is brownish on your George Foreman grill.
In a skillet on the stove, cook the onions until they are semi-translucent and have begun to pick up a little color. Remove from heat and set aside. In the same skillet, cook the bell pepper strips just until they are beginning to soften and char. Set aside.
Warm the tortillas in the microwave for about a minute or so, just until warm and softened.
On a tortilla, place some chicken topped by the onions and bell pepper strips. Top with the toppings of your choice, sour cream, cheese, whatever.
Roll up and enjoy!
