Cheese soup?

Could anyone tell me what exactly cheese soup is? I think it probably sounds like a silly question, but I don't know. I Keep seeing rave reviews for it too. We're eating in Le Cellier in November so I thought I should find out what it is and the ingredients. THANKS
 
It's an excellent soup at Le Cellier, I believe it's on the appetizers menu. It's cheddar cheese, bacon bits, pieces of potato, and something like parsley. I'm sure there's something else in the actual soup part, but those are the main ingredients. It's one of my favorite things to eat at Epcot. I highly recommend it.
 
Sounds excellent! I read somewhere that it had too much of the beer taste left in it from a poster. Do they use alcohol in this soup? Thanks
 
Let me start by saying that I love soup, love cheese, love the potato and, more importantly, love beer. That said, I don't know why, and I'm definitely in the minority, but I absolutely hated the soup. Now I only had it at F&W from the stand outside Canada, so it might be different from what is sold in LeCellier, but I doubt it. I tasted it, thought BLECH, but tried a few more spoolfuls. I asked my friend what she thought - and she agreed with me. Both cups went into the nearest garbage can. You should definitely try it if you're so inclined because, like I said, I seem to be in the minority here, but I thought it was one of the worst soups I've ever had. And please, folks, this is just my opinion, not a personal assault on those of you who love it, so keep the flamethrowers holstered.
 

So, do they use beer in the soup????????? EEK im not sure about that. We don't drink.. and I don't know I could stand the taste of beer in my soup.
 
I think they may use beer in the soup, but that's only because that's what I've heard. I never tasted any kind of beer taste, and I loved the soup (especially with the pretzel bread) !!!
 
Yes, there is beer in the soup, but all of the alcohol taste is boiled away as the soup is cooked. I don't think you would notice any particular beer taste. I am not a beer fan, but I do like this soup!
 
Since it's a Canadian themed restaurant, I think several things on their menu including the cheese soup had their national Moosehead (I think it's called) beer in it. I hate the taste of beer but didn't notice it much in the soup. My biggest problem was that I thought it tasted more like regular old potato soup rather than cheese. I thought it was okay at best. I gave it to my DH who loved it even though he hates Moosehead beer (so the beer taste must be really minimal). Personally, I'll stick with the breads- especially the pretzel one. That was the bet part I thought- until the cream cheese potatoes came! YUMMY!

Here is what is in the soup. I made this a few times at home, and we had it at Le Cellier. Yum!

Recipe
Cheddar Cheese Soup

Le Cellier
Canada - Epcot

Ingredients:

1/2 lb bacon cut into 1/2 in. pieces
3 celery ribs cut into 1/4 in pieces
3 cups milk
1 medium red onion cut into 1/4 in. pieces
2 tbsp butter
3 cups water
3 dashes tabasco
1 cup flour
1/2 cup beer
3/4 lb. grated white cheddar cheese
salt and pepper to taste

Method:

In a soup pot, start to brown the bacon over medium heat. When the bacon is starting to get crisp, add the onions, celery and butter. Cook until the onion is translucent.

Add the flour and incorporate with the butter. Cook for 4 minutes, constantly stirring.

Add the water and whisk. Make sure there are no lumps.

Bring to a boil then reduce to a simmer and cook for 15 minutes, stir every couple of minutes.

Add the milk and continue to simmer for 15 minutes. Do not boil after you add the milk.

After the last 15 minutes, turn off the heat and stir in the cheese then the beer. Add the tabasco and season with salt and pepper. If the soup is too thick you can thin it out with some milk.

Serve with your favorite bread and top with some chopped scallions or chives.
 
Yes I have made it at home also, subsituted sam adams for the moosehead wow what a differance it's much better ( just kidding) its one of our favorats :banana: :banana: :banana: :banana: :banana: :banana: :banana:
 
My husband LOVES the Canadian Cheddar Cheese soup. We both really like it - but he loves it so much that we decided to serve it as the appetizer for our November 2003 Disney Wedding. On the menu I called it "Michael's Favorite Canadian Cheddar Cheese Soup." It was a huge hit with our guests.

We are going down at the end of the month for our friend's Disney wedding - and will definitely be making a stop at Le Cellier for the soup.
 
I too was disappointed in the cheese soup at Le Cellier. Although I didn't hate it, I didn't see what all of the fuss was about. It tasted like a plain old creamy soup to me. Maybe my expectations were too high.

The French Dip sandwich however was delicious!
