I know I can check in very early, then go to the parks as a resort guest taking advantage of extra magic hour/early entry. Of course I know the room won't be ready, but I still get my resort ID. But, on the morning of check-out, can I check out and still be eligible for early entry to the parks that day even though I won't be staying on site that night?

Both our first and last days are early entry at MK, which is going to be the park my dd will be most interested in. I'd like to take advantage of it as often as possible.

Yes. You are still considered a guest on checkout day, no matter when you check out.
