I made this tonight -

2 packages of ground turkey on sale ($3.99 total on a buy one, get one sale at Shaw's)
1 canister of store brand stuffing mix (or 2 boxes on sale at Walmart for .88 each)
2 eggs
1/2 cup water

Mix well and form into 40 meatballs. I put them in my slow cooker because I was busy and they cooked on high for 3 hours along with 2 cans of Hunt's spaghetti sauce (.82 each at Walmart). You could just brown them in a pan or bake them, depending on how busy you are.

If you do them in the slow cooker, some of the bottom ones might not be so spherical when you take them out. Some of mine looked a little funny. :) Also, they absorbed some of the sauce so if you like a lot of sauce, you'll have to add some extra.

It's enough for three meals of meatballs and spaghetti here. It works out to about $2.46 per meal for the meatballs - not bad!!

:thumbsup2 Sprite Chicken! My kids LOVE this stuff!

3 frozen chicken breast
20oz Sprite or off brand
1 cup or so of water
A few dashes of Lawrys
A few dashes of Chopped Parsely

Put All in the crockpot on LOW all day! The chicken soaks up the sprite and it tastes great! I don't know the exact measurements of Parsely and Lawrys season much apologies.

Ground pork, mixed with seasonings, shaped into patties. Pancakes. Sliced watermelon. You're done!

Few of my favorites...

Pasta with Fresh Tomato Sauce
Start the pasta boiling. Dice fresh tomatoes -- vine ripe or heirloom or from your own garden are best and put in a bowl. Sprinkle with salt and black pepper. Chop a little fresh basil and add to the tomatoes. Drizzle with olive oil, or if you like garlic, brown some in olive oil and pour on top of the tomatoes. Let this sit until the pasta finishes cooking and then add while pasta is still hot and toss together. You can top with cheese if you want.

Another easy tomato sauce
Saute an onion and garlic, add tomatoes (fresh or canned are fine), cook until "saucy" -- add water if the texture is too thick. Season with salt and pepper. Add cooked pasta to the pan and cook a minute or two longer to get the flavor incorporated. You can add meat (I like ham) to the sauce to get the protein in, or spice it up with some cayenne.

The all purpose egg dish...
Saute onion, potato, peppers if you want -- season with salt and pepper. Crack in several eggs and cook like scrambled eggs. Simple, cheap, and delicious... I think this will be my dinner tonight :thumbsup2
 
I made hearty salads for dinner.

Torn lettuce (Costco romaine, 5 or 6 heads for $3.99)

Leftover cooked pork loin (Costco seasoned pork loin bought with this week's $5 off coupon) diced.

Rinsed red kidney beans

Pineapple ring

Mango salsa as a dressing (Again, Costco. Can you tell I did a big Costco shop this week?)

DS15 wanted a grain to go with it, so he made some couscous.

Dessert was either ice cream or tapioca I made the other day in the crockpot. No stirring!

I hope to see this thread up and going again especially with back to school.

Tonight we had nothing fancy at all, just a casserole I will occassionally make but the kiddos like it and it is super easy and that is what counts for me. The casserole doesn't even have a name but we call it hamburger corn noodle casserole :rotfl: because theres' hamburger, corn, noodles you get the picture ;)

1 lb ground beef browned and drained
1/2 package of medium egg noodles
1 can whole kernel corn drained
2 cans tomato soup undiluted
1/2 cup your fave shredded cheese

You just cook the beef and noodles then mix everything together and serve warm, sometimes I have put in the oven and then topped with cheese but it dried it out a bit. We had green salad with carotts and cucumbers and green beans.

I picked up this hint the other week on Food Network -
boneless, skinless chicken breast rubbed with a few drips of olive oil and then just salt & pepper. Bake at 375 for about 45 minutes.

Chicken breasts were $1.87/lb this week at Kroger (bought 9 pkgs to stock my freezer)
Yeast rolls were on the bakery clearance cart for $1.29/dozen
Made 3 pans of roasted fresh veggies (zuccini/carrots/onions/mushrooms/baby red potatoes/peppers/green beans) and have leftovers to pair with other meals this week.

Lined the chicken pan with tin foil for easy clean-up and let my oven cook for me tonight! My family loved it :lovestruc
 
I defrosted some ham today and barely ate any of it.

So what do I do with it? Tomorrow is definitely supposed to be warmer than today. I don't think anyone will want soup.

Tonight's cheapo dinner:

Homemade corn and tomato soup:
1 can veggie broth
2 gloves garlic chopped
onion powder (out of onions)
4 tomatoes because our garden is about to explode with tomatoes

Heat for a while to cook the tomatoes, then puree with stick blender.

Add 3 ears of corn previously frozen

And heat. I served it with slivers of basil for two of us, ds15 added tabasco.

I also made grilled ham and cheese sandwiches.

Sandy Gluck has a slot on there where she will tell you meals to make from items in your cabinet- i.e. you have 1/2 cup rice left, 2 cans navy beans someone gave you while moving, you've never used, 2 stalks celery getting ready to go bad, a tomato and 2 slices of meatloaf- she's amazing she will tell you how to make a dish w/ it or even a sandwich- LOL I love listening to her!
