Celiac at WDW

Hello, I am new to the whole world of celiac disease and was wondering how WDW handles it. I have notated it on all of my reservations and written to special diets but what happens next? Are there certain restaurants I should avoid all together or will every restaurant be able to prepare something for me? For instance, would it be crazy for me to go to Via Napoli and expect them to be able make me a gluten free pizza? I have been to WDW many times and have enjoyed many meals but this is the first time going with an allergy. I don't know why I am having such a hard time with this.
 
As PP said, WDW is amazing with gluten intollerance/celiac. If you do a search in this forum you'll find LOTS of gluten free dining reviews. I've got a bunch of my own linked in my signature. There are also plenty of blogs by gluten free guests on the internet if you want to google them. Searching this board alone should give you a pretty good idea of just how great they are though.

I generally avoid restaurants not owned by Disney because they just don't have the same protocols or options as the Disney owned ones. There are a few exceptions like Teppan Edo and Kouzzina which get rave reviews in allergy communities but otherwise I just don't dine at them. I discovered the difference the hard way after an extremely frustrating experience at Les Chefs de France where my 15yo (I think 12 at the time) ended up eating a bunless burger with plain dressingless salad for her meal because that's all she could have (she's off a lot more than just gluten) and we were treated by our server like we were a pain in the rear and the chef was clearly displeased with having to come speak with us.

They handle celiac very well. I will say that Via Napoli will have food for you, but unless something has changed, they do not have GF pizza. I was not impressed with Nine Dragons. When La Hacienda first opened, they were not very knowledgeable, but I gave them another chance, and it has improved.

Starring Rolls did not have anything GF for me, but they did send a runner to Brown Derby to get me a boxed lunch they had been able to make.
 

Me, my husband and our child can not eat gluten. We have been to Disney two times in the past year and had AMAZING experiences! The Counter Service/Quick Service/Food Courts whatever you want to call them were also great! We just asked to speak to the chef. Yes, we held up the line a bit and the chef came out and talked to us. They made our food to order and would come out and deliver it! We stayed at WL and POR and had great experiences eating gluten free in both food courts. We also ate at Columbia Harbour House in Magic Kingdom, Sunshine Seasons in Epcot, and some other Quick service places. Tusker House, Chef Mickey's and Whispering Canyon were all wonderful too! It was very easy to eat gluten free in Disney-in fact it's the only place we enjoy eating out! You will have NO PROBLEMS at all in Disney!!!

Adjusting to a new way of eating is a big change anywhere and especially when you are used to eating a certain way at our beloved WDW restaurants! In 2010, my health necessitated a change to a very strict diet with multiple food allergies and intolerances. I also have celiac. So, I understand going from eating foods you love at WDW to not being able to have them. I sure miss the bread pudding at O'hana! But, as I've found, you can do WDW w/allergies and enjoy your food! :)

WDW special diets sent me a gluten-free PDF that lists some gluten-free items at different venues which I found helpful. I look at menus before I make ADRs to make sure the restaurant probably had something I could eat or that they could modify easily. WDW recommends and I personally recommend talking to a manager at Quick Service and asking to speak to a chef at Table Service. Usually at TS, the waiter will not even take my order and looks to the chef to dictate the order after we have discussed what I'd like to have and if/how he can modify the dish. I have social anxiety and before my first food allergy trip, I was quite nervous about the thought of talking to a chef/manager every time I ate. But after a couple interactions, I found out just how wonderful WDW restaurants (managers, chefs and waiters) are. They go above and beyond.

Personally, I avoid buffets as I am terrified of cross-contamination. However, the chef will walk you through the buffet and let you know what is safe/not safe for you. My husband loves Biergarten because of his German heritage. Last visit ('12), the chef there brought me the food binder and had me tell him what I could/could not eat based on my allergies/intolerances. He brought a yummy feast to the table from the back (not the buffet) and even threw in some dishes that weren't on the buffet that he was working on as dishes that might soon be added to the buffet. If you go to buffets, don't hesitate to ask for your food choices to be dished out in the back to reduce the risk of cross-contamination.

I have had chefs at different TS restaurants create dishes for me that weren't on the menu. That was really exciting and I felt really special and we could tell the chefs (esp. at Artist Point 2011) enjoyed it. Instead of feeling like I had to make the food offerings work for me by omitting/modifying items--or eat the same dessert at every place, I had a unique creations for entree and dessert made just for me!

They have many with food allergies/intolerances so the managers & chefs should be able to help you find celiac friendly food. During a not-very-busy lunch seating at Coral Reef last year, the chef said he had 5 other tables with food allergies at the same time. I find it MUCH easier to eat at WDW than I do at table service restaurants in my Chicago-land home!

You will likely eat better in Disney than you do at home! Make sure your waiter knows when you arrive at a sit down and alert the staff at counter service so they can get a supervisor. They will all walk you through your choices. Not only do they have gluten free pastas, breads, bakery items etc. but they taste amazing! My husband kept trying to eat my rolls at Coral Reef since mine were better.
 
Oooh, I'm hopping on board here. I'm gluten free only since July. Years ago when I became a vegetarian there wasn't much for me to eat in restaurants at home but I found lots of choices (including off-menu) at WDW. I'm hoping for the same here. Maybe I'll get some ideas for home.
