Yum! We really enjoy catfish here. I usually just spray the fillets with olive oil (I use a Misto, but PAM would work) & then sprinkle with 1 - 3 Tbl Cajun Spice. I use less for DD & more for DH...I usually do both sides. Then I just bake until it turns white.
I've also gotten the recipe from Garden Grill. This is what they sent:
PLANTAIN FRIED CATFISH
From Garden Grill, EPCOT
1/16 lb Plantain chips - ground (like potato chips)
1/16 lb Corn flakes - ground
Mix ingredients together.
Coat fish and deep fry.
Serves: 4 = 2 ounces
However, I didn't deep fry them & thought they seemed a little bland...I just pan fried in olive oil that covered the bottom of the pan. The next time, I tried adding 2 Tbl cajun spice to their recipe & we really liked them that way.
