Can I justify making a carrot cake on my new venture into vegetarianism? We've been good. j
 
Vegetarians eat sweets, so why not?

IF you are vegan, that could be a little troublesome since it is cream cheese frosting.
 
Of course you can, it's delicious. I love carrot cake with cream cheese, which is a no no if you're a vegan but you said vegetarian so I guess I'm ok:goodvibes If you were doing vegan maybe some powdered sugar on top... it's pretty when you put a paper cut out on top and sift the sugar over it leaving a hand made design.
 

Well it's baking. I subbed out half of the flour for whole wheat. I switched the oil to a extra light olive oil. But it's still going to have cream cheese frosting.

Lets not go overboard here. I think the fact that it has carrots in it makes it healthy enough-at least that's how I would justify it. :rolleyes: I'm sure that cream cheese frosting can make even whole wheat taste yummy.:laughing:
 
Enjoy your carrot cake! It sounds a lot better than the carrot cake Cliff Bar I had today for lunch. That's as close as I come to eating sweets.
