Carrot Cake Recipe-have a good one??

I'm looking for a really moist, great Carrot Cake recipe. Anybody here have one?? Mine is always dry and ehhh not the best.
 
2 1/4 cups all purpose flour
2 heaping teaspoons cinnamon
2 teaspoons baking soda
1 teaspoon salt
1/4 teaspoon nutmege
1/4 teaspoon allspice
2 cups sugar
1 1/4 cups vegetable oil
3 large eggs
2 teaspoons vanilla extract
2 cups shredded carrots (about 3 large)
2 cups flaked coconut
1 cup chopped pecans
1 cup raisins
1 8 oz can crushed pineapple in juice

Preheat oven to 350 F
Grease and flour 3 8 inch cake pans
In large bowl with mixer at medium speed beat sugar,oil, eggs and vanilla.
Add flour, cinnamon, baking soda, salt nutmeg and allspice- beat until blended. With spoon stir in remaining ingredients.
bake 30 to 35 minutes until a knife inserted in the center comes out clean. Frost with Cream cheese Frosting
Garnish with pecans if desired/
 
anyone got a carrot cake recipe that DOES NOT include pineapple? I love carrot cake but I'm highly allergic to pineapple.

Once you try this one no other one will measure up!:)

Carrot Cake

1 20 oz can crushed pineapple
2 Cups sugar
1 1/2 Cups cooking oil
4 eggs
2 Cups flour
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
1 1/4 tsp. nutmeg
1 tsp. salt
3 Cups grated carrots
1 Cup chopped nuts

Preheat oven to 325 degrees. Grease & flour 3 8" round pans.

Drain pineapple, reserving half the juice. In a large bowl, cream sugar and oil. Beat in eggs. Add dry ingredients and mix well. Fold in pineapple, reserved juice, carrots and nuts.

Pour batter into pans. Bake for 250 40 minutes or until toothpick inserted in center comes out clean.

Cream Cheese Icing

1 lb. cream cheese, softened
1 Cup butter, softened
2 tsp. vanilla
2 1/2 lbs. posered sugar

Cream butter & cream cheese together with mixer; add vanilla.
Then gradually beat in sugar. Mix until icing is of spreading consistency. You can add a little milk to make it of spreading consistency.


Ice cooled cakes.

This carrot cake is soooo good, and I'm not even a big carrot cake fan!

Carrot Cake

2 c. sifted flour
2 tsp. baking soda
1 tsp. salt
2 c sugar
2 tsp. cinnamon
1 ½ c vegetable oil
4 eggs
3c shredded carrots
½ c chopped pecans

Sift together flour, soda, salt, sugar and cinnamon. Add oil, eggs and carrots. Beat well. Add pecans. Pour into three greased and floured 8-inch cake pans or one 13x9x2 inch pan. Bake 30 minutes and 350 for layers or 45 to 50 minutes for loaf cake. Cool in pans for 5 minutes, then on cake racks.

Creamy Icing:

1 (8oz) pkg. cream cheese
3 ½ c sifted powdered sugar
½ c margarine
2 tsp vanilla
1 c chopped pecans
½ c coconut (optional)

Soften Cheese, Blend in remaining ingredients until smooth.
Spread over cool cake.
 
This is excellent and you could leave out the pineapple, raisins and or nuts. It does bake quicker than indicated, so start checking for doneness at like 30 minutes

1 cup sugar
1 1/2 cup Butter -- softened
3 large Eggs
2 tsp Pure vanilla extract
3 cups Grated carrots
1/2 cup Crushed pineapple -- drained
1 cup raisins -- (6-oz.)
1 cup chopped walnuts -- (4-oz.)
ICING:
16 oz Cream cheese -- softened
1/2 cup butter -- softened
1 tbsp Fresh lemon juice (about 1 large lemon)
2 tsp Pure vanilla extract
3 cups Confectioners' sugar

Preheat oven to 350-degrees. Grease and flour two 9-inch cake pans.
In a large bowl stir together flour, baking soda, salt, cinnamon and sugars. Add butter, one egg and vanilla; blend with electric mixer on low speed. Increase speed to medium and beat for 2 minutes. Scrape down sides of bowl. And remaining eggs, one at a time, beating 30 seconds after each addition. Add carrots, pineapple, raisins and walnuts. Blend on low until thoroughly combined. Pour batter into prepared pans and smooth the surface with a rubber spatula. Bake in center of oven for 60-70 minutes. Toothpick inserted into center should come out clean. Cool in pans for 10 minutes. Then invert cakes on rack and cool to room temperature.

PREPARE ICING: In a medium bowl with an electric mixer on medium speed, beat cream cheese and butter until smooth add lemon juice and vanilla; beat until combined. Add sugar gradually, mixing on low until smooth.

ICE THE CARROT CAKE: Place one layer on a cake platter, and with a metal spatula spread icing over the top to form a thin filling. Place second layer over the first, rounded side up. Coat the top and sides of the cake evenly with remaining icing. Refrigerate 1 hour to set icing.
 
I have a great recipe, but it's so full of oil and cream cheese that you need to eat it on a gurney in the surgery prep room so they can put that roto rooter thingy in to clear things out after you eat it;)

But your eyesight may be vastly improved from the Vitamin A!

I normally don't like carrot cake, but that one sounds pretty tasty! May just have to add it to my recipe collection and give it a try..:thumbsup2
 
I also have a fantastic oil and sugar recipe that has never failed to be moist and delicious. It's my family's favorite home-made dessert. I don't feel like typing out the recipe if you're not going to need it because you have so many others. If you decide you want it, PM me and I'll be glad to take the time to type it out for you.
 
I'm liking the ones "with" the pineapple because I think that would kind of overpower the taste of the carrots.. Yes? No?

I haven't made this one in a while -but it just tastes good.
Not a strong carrot taste. You taste the spices more.
 
Hey all,
I don't know if your sugar/oil recipes are the ones I have also, but maybe someone can add to this thread and help!!! The one I had (from years back) actaully called for Junior size jars of Baby Carrots. The cake came out soooo great and moist (and was easy to do). Problem the last couple of years is that no more Junior size jars of baby carrots to be had!!! Anyone have any clue??? substitutions/ where to get it etc
