If we do an early breakfast at Captain's Grille can we park there? Can we stay parked there and then walk to Epcot? Paying a parking fee is fine, I just don't want to have to eat and then bother with moving my car.

Definitely. Just make sure you valet park and you'll have no problem.

If we leave to go back to our house mid afternoon, can we then repark at Epcot or elsewhere without additional charge?

Yes. Once you pay to valet it is good for 24 hours.
