I would first say, I wouldn't base my resort stay at any resort on the restaurants, particularly the counter service, on a Disney property when you have so many other choices closeby.
Captain Cook's is a counter service that serves a breakfast menu, followed by lunch and dinner, mostly the same menu. They have other offerings such as baked goods (bagels, toasts, pastries, muffins, etc.), refrigerated items such as drinks, yogurts, fruit, cheese plates, veggies, salads, etc. They have snack items such as cereal, chips, Pop Tarts, candy bars, ice cream, Dole Whips. They have fountain drink stations with soft drinks, coffee, teas and hot chocolate.
The hot breakfast items include a typical breakfast platter with eggs, breakfast meats, etc. They have Tonga Toast, waffles and other traditional breakfast items.
Lunches and dinners they have burgers, salads, sandwiches, flatbreads (pizza). They have a few items with a Polynesian flair like a chicken noodle bowl, Hawaiian flatbread, a pork sandwich, stirfry veggies and Polynesian chips as sides.

Whether it appeals to you or not, only you will know, but they have pretty standard counter service fare along with some other unique items.
