Since you can't really book the event until July (when talent etc. is lined up) would it be best to save dining credits for July? I want to make all my ADR's (excluding CLP) when they open up in June but since I don't know CLP dates then I'm afraid I'll have to cancel one and not be able to get it back..... SO many bigger problems in the world but this is the one my brain is stuck on... lol

Dining credits are completely separate from ADRs. Book what you want to book and rearrange later if necessary when CLP packages are released.
 
don't know what you mean by "save dining credits." You don't actually have any dining credits until after you check in to your resort. ADRs are just reservations. you can make one now, and then cancel it when you decide you'd rather book something else.
 
Yup, you can make any reservations you want, they aren't tied to your dining plan credits at all until you're paying at the restaurant.
