We are flying from Newark to Orlando on Sunday when the forecast for that morning is 2 degrees.
Our first night, we are staying onsite at WDW in a non-DVC resort.
I'm worried my flight will be cancelled & we might be delayed by a day.
I know that if you cancel between 30 days and 1 Day before check-in all your points for that trip will be placed in a holding account.

My question is what is "1 Day" before check-in?
Is it anytime the day before check-in or is it 4pm the day before or something else?

I know I'm probably needlessly worrying about the cold  (I believe its like -60F at cruising altitude).
TIA

I can’t speak to the DVC cancellation policy, but I’ll go out on a limb and say I think the loss of your flight strictly due to low temperature is minimal with the zero precipitation forecast for Newark. And you are right, about -50 to -60C (-60 to -70F) at Cruise.

Are you staying on points the 1st night in a NON DVC unit? If you cancel those points will NOT go back into DVC points, and can not be used for a DVC reservation. I have never heard of a flight being cancel due to low temps, maybe for icing. But at high temps they will cancel due to the air being too thin to provide enough lift. (not a problem for your trip)

Are you staying on points the 1st night in a NON DVC unit?
First night is cash. Followed by a 3-night DVC point stay.
I'm not worried about what happens to the one night cash stay
If our flight is cancelled & we can't rebook for the same day, we may want to cancel the 3-night DVC stay so we don't forfeit the points. I'll then try to make a new reservation from the points in the holding account.

I want to know the deadline for cancelling without losing the points.
I have found "One Day Before Check-In" & "On the Check-In date" on the DVC site.
I'm trying to make sure that I can cancel at anytime on Sunday for a Monday arrival.

1 day prior to check in means the day before you are scheduled to check in. So if something happened and you couldn't make the flight on Sunday you could cancel DVC reservation with Monday check in and the points would be returned to your account in hold status.

But I agree - cold will not cancel your flight.

EWR is currently open but most flights cancelled and the few left are not being allowed to take off. There will be one holy backup of people trying to reschedule after the storm. Hard to say the net result of the historic cold temps predicted for the weekend. EWR has issues when the weather is good so like you I would be concerned... I have flown out for years and my motto is hope for the best but plan for the worst

Good news is that you are on a scheduled flight for Sunday so hopefully it will be OK. If not as others have said I think you can safely have your points put in holding.

Best of luck and stay safe in the storm!
