Can we go to the park twice in one day?

We don't have parkhopper passes.

I cannot remember if we can do this or not. Can we use our tickets in the morning, leave for a nap (two small kids) and come back to the same park later on that evening and use the same ticket? Will that count as one day or two?

If you leave and return to the same park the same day it is considered one day used on your ticket.

to answer your second question first, you cannot use 2 theme park days in 1 day, even if you tried. so no, it wouldn't do that.

but yes, you have unlimited exit/re-entry to the same theme park that day without the park hopper option

You may leave and enter the same park as many times a day as you like, you just can't "hop" to another park.
