Can we do ME on our way home only?

We're thinking of staying offsite on our arrival night, so not using ME. Can we still use it to get from POFQ to MCO for departure?

Yes you can, just make advance reservtions and on the night before your departure from POFQ you will be given a letter with your departure time.
Bring the letter to the bus to give to the driver.

Actually, You can still us DME even if you stay offsite. That is, if you stay right by the airport. We stayed at Residence Inn Airport. They had a free shuttle to/from the airport. After our nights sleep, they shuttled us back to the airport and we took DME to POR. You need a reservation, that's it. To not confuse the DME people, we gave them a flight that landed on our WDW check in day and we were set. The Residence Inn driver even dropped us off right at the DME check in area.

The normal deadline for making or reconfirming your Magical Express reservation going home is the morning of the day before departure/checkout day.
