Can someone give me the lowdown on Jedi Training?

On previous trips, My kids had no clue about Star Wars. Now they are Jedi obsessed. They has asked about Jedi training. All I know is that it takes place in HS and I heard you have to get to the park at opening to sign up.

Is there more to this that I know? Can someone fill me in? Thanks.
