Hoping someone can help me out, and if this is the wrong place for this thread I apologize.

I had never looked into DVC point rentals until recently and noticed there are some nice resorts at some pretty good prices. Our trip coming up is pretty soon, 45 days out, is it possible to switch from a value resort with Disney to a DVC property at this point or have we missed the monorail this time around?

If we have missed the monorail, for our next trip I think we will be doing this - are all the other process of a Disney trip the same, 180 day ADR, 60 day fast passes, free magic bands, meal plans, etc?

Not a chance. Fall is dead booked. DVC rental is best engaged 11 months in advance of your arrival date for fall season, or no later than 7 months in advance for the balance of the year, and even then you won't get many rooms.

DVC never gets free dining. DVC does get Magic Bands, 60 day FP+, Magical Express. DVC rental is typically a final transaction and you must PIF at the time of reservation. Similarly, if you book a meal plan, that must be paid in full at time of booking, and can only be added y the owner of the DVC points who made your reservation.

I am guessing that by your "nice resorts at some pretty good prices" you probably priced rooms like Boardwalk Villas Standard or AKV Value. Those demand 11-month booking for owners/renters year-round.
