Can I freeze raw mushrooms? I have some left over that I want to use for pizza toppings...but not until Saturday.

You can try sauteeing them then freezing but freezing them as is will turn them into a m ushy sponge when you thaw them.

I would think if you are going to freeze mushrooms, you'd have to "flash freeze" them on like a cookie sheet to keep them seperate before putting them in a container or bag. I'm imagine that they would almost melt when thawing out though.

Do you have an airtight container that you could just store the mushrooms in? I put my fresh mushrooms in a green bag and they last for over a week or more.

Yes, try this...

My MIL used to freeze Morrell mushrooms.
You can't buy these. You have to hunt them wild during their very short season in May. So, freezing was important if they found a lot.

If I am right, she would wash them and then freeze them completely submerged in containers of water.... (NOT dry, NOT flash frozen).

Then, they would be slowly thawed in the fridge.

I am sure that these were no longer like fresh mushrooms.
But, I would imagine that this would be the best method.

You would probably not put them on a salad like fresh mushrooms. But they might be good for entrees, sauces, etc...

I freeze mushrooms all the time. Just cut them into the shape you want and put them in the freezer. They are only good for cooking. I usually stir-fry with them or put them on top of a pizza.
