It's interesting that Disney does allow bags on it's coasters. If you're on Space Mountain with a backpack and you're holding it, and you let go during the ride, there is a chance it will fall onto a piece of track underneath you, thus causing a train to smash into it, causing many problems.
Of course this is the company that doesn't check lapbars either.
But yeah, at Universal, Dragons, Hulk, Mummy and Men in Black require lockers. All the other attractions you may take on with you, or there are storage bins.
EDIT: Also, the lockers are done through fingerprints. Just follow the directions on the screen at the lockers. They are very clear. It surprises me how many people have locker problems.
