I feel I MUST share the most awesome recipe with you!
Usually I can take or leave bread pudding nothing special but I found this one and it is so decadent yummy... ooooo, you just have to try it!
IRISH BREAD PUDDING WITH CARAMEL WHISKEY SAUSE
Preheat oven to 350.
Combine 1/2 cup raisins and 1/4 cup Irish whiskey in a small bowl. Cover and let stand for at least 10 minutes. Do not drain.
1 (10oz) French bread baguette cut into 1 inch thick slices
Brush 1/4 cup melted butter on slices and bake butered side up for 10 minutes. Let cool, then cut into 1/2 inch cubes and set aside.
Whisk together in large bowl:
1 3/4 cups half & half
1 cup sugar
1 TBS Vanilla
1 (12 oz) can of evap. milk
2 beaten eggs
Add bread cubes and raisin mixture.
Press down and allow to stand for at least 15 minutes.
Spray 9x13 pan with cooking spray, then spoon in mixture.
Combine 3 TBS sugar and 3 TBS cinnamon and sprinkle over pudding.
Bake in 350 oven for 35 to 40 minutes or until set.
**NOTE = You may subsitute apple juice for the whiskey (but why???)
CARAMEL WHISKEY SAUSE
1 1/2 cup sugar
2/3 cup water
Combine in heavy metal sause pan over med-high heat,
cook and stir contantly until sugar dissolves.
Allow to cook an additional 15 to 20 minutes
DO NOT STIR until mixture becomes dark golden and syrupy.
Remove from heat and stir in:
1/4 cup butter
2 oz (aprox 1/4 cup) cream cheese
Let cool slightly then stir in:
1/4 cup Irish Whiskey
1/4 cup half & half or heavy cream
Serve warm over Bread pudding.
YUM!!! Do save this one... it is worth the effort!
