When exactly are activities available to book? I just received a reminder email that I can book on the 8th but there isn't a time/time zone listed. I'm not sure how popular the excursions we've picked are but I'm hoping we'll be able to book them easily.

Also, is there anything required when I book? Do I have to put a card as a hold?

When you do the online check in, they will ask for some form of payment (like credit card) to be able to place on board charges against. I've always done a credit card, so I don't recall what your other options are. Plan to have travel info (flight numbers, hotel, etc.) as well as ID info (like passport #) on hand. Though you don't have to do the online check in to book port excursions or on board activities. I believe you do have to do that though to get a port arrival time.
 

You asked what activities there are to book. Excursions are probably the biggie. Brunch or dinner at Palo or Remy if you want. There are also some alcohol tastings and kids things like Bibbity Bibbity Boutique and maybe some meet & greets with characters.... We've never done any of these so not sure how that works. Most everything else is open to all, no reservations required.
 
Although your activities booking window opens at midnight Eastern time, you can complete other check-in information earlier in the evening. Try after 8 pm. For us, it took a lot of the pressure off trying to get everything entered at midnight, and then booking tastings and Palo Brunch. If you are unable to get the activities you want, check the Navigator you receive when you check in at the port for where and when to go once you board the ship to make dining and activity reservations. You may want to take a look at some of the Day 1 Navigators online for a cruise similar to your cruise to get a feel for where to find the information.
 
Are you able to book the pass for the Rainforest rooms online before the cruise, or only onboard the ship on the first day? Is that something that sells out quickly?

Although you do not need to have this to book excursions as they are not charged until the cruise. There will not be a hold put on the card when you book. I often just check off "cash" until DH gives me his credit card information. You will need to have that entered prior to the cruise but it can also be changed or updated upon physical check-in at the port though it does slow the process down.

Length of cruise only onboard and there is a limit.

Single day is only in advance through gifts and amenities.
