Boneless Square Cut Roasts are on sale at our local grocer. They are beef bottom round. Any ideas on how to cook these? We are not big on roasts, but I am trying to stay on budget!!

You can also dump one or two of them in your crockpot with a bottle of barbecue sauce. I like to add the ingredients for my own homemade BBQ sauce instead, but bottled works, too. Cook for about 8 hours. When it is falling apart tender, shred with forks and serve on rolls. The extras can be frozen.

I was going to suggest the same thing. I got this recipe from the "What's for Dinner" thread on the community board and it makes one of the best roasts we have had. I add onions, carrots and potatoes too.

Put it in the crock pot. Cut slits in the roast and add minced garlic, about 1 clove per pound. Then pour one 16 oz. jar of pepperoncini peppers over it, juice and all. Cook on low for 8-10 hours. Awesome! We're not big on roast either but love this recipe. The meat isn't spicy hot, just has great flavor. HTH!
Just wanted to add....if the price is really good, I buy them and put in freezer. I sometimes cut them up and use them for stew or beef soup. I have also sliced them across the grain in 1-2" slices and put them in my crockpot to make stroganoff.
For stroganoff I use about 2-3 pounds of beef, one large onion sliced placed in the bottom of the pot with beef on top of it. One can of cream of mushroom soup. I often add one beef bullion cube too. I just smash it and mix it with the soup. Cook on low 8 hrs or high for 5 or so hours till meat is very tender then add sour cream. We love this over noodles and it freezes well.

Yep, I cook mine w/ the same ingredients & it is awesome!! I use 2 cans of soup but it should be the cream of mushroom, not cream of chicken, right? (I use the healthy request version) and one packet of the dry onion soup mix and I do add a can of water. It makes more gravy. It is sooooo good and will make your house smell so yummy! We eat ours over rice. My friend also swears that by adding one large bayleaf, it tastes even better.
