We have eaten at Boma twice and, as a food snob, I would rate Boma as exceptional and a "don't miss" restaurant at WDW. IMHO, it is one of the two best buffets at WDW when quality, selection, and menu are considered (Cape May Cafe is the other buffet I would rate highly. Trails End rates high for quality, but low for atmosphere and menu in my book, but also wins the price war with almost any restaurant at Disney). That said, Boma's quality and menu are somewhat uneven (but, IMHO, predictably uneven). I would rate their soups as among the best that I have ever tasted in any restaurant in which I have eaten. Many are unfamiliar and have unique spicing. I usually try a little of each before I determine the two or three that I will eat larger portions of. In general, their meat dishes are average. Their Durban Chicken is probably my favorite, and the "prime rib" wasn't quite good the last time we ate there. Some of the vegetarian dishes are also quite good, but some are kind of bland and simplistic. The fresh fruit is usually very good, and the dessert buffet is excellent, although you have to try things before you find what is particularly good on a given night. The zebra domes are excellent, although they have changed the way they prepare them since they first opened and the new, smaller ones are not quite as good (though they are generally still "to die for"). Even a non-adventurous eater can enjoy Boma, but you do have to be willing to try things to find out what you like.
