I was really wanting to try Boma twice. I had it for dinner our first night and breakfast the last day. Now, it seems like we have too many ADRs. So, if you were only going to do one meal at Boma which would it be and why?

I'd eat at Boma whenever I could, but would do dinner if there was only one chance. Just because it's a huge variety of different types of foods, the prime rib has always been excellent, and the soups are unusual (to me) and excellent.
Some people have described breakfast as 'the usual buffet fare', but I loved it. Not the variety that dinner has, but I thought it was great food and there were some interesting choices. The juice that's offered at the table is extra good and very different.

Breakfast is good, but dinner is great. There are more unusual offerings at dinner and the desserts are amazing.

I would vote dinner. The breakfast at Boma is very, very good, but for the most part it's just your basic breakfast buffet. At dinner, there are more exotic entrees that you most likely can't get at home and can't get anywhere else in WDW. Have a great vacation!
