Biggest Loser Fall Challenge!

Surprise, surprise.... got called to work!! TTY later tonight. I promise I'll get a recipe posted tonight!..............P

Helllllooooo..... anyone out there?? (cricket, cricket)

Once again, I'm talking to myself here on the Dis!! A community of thousands and I am all alone!!:rotfl2:

No worries! I'll just answer my own QOTD and maybe it will prompt some responses!

Okay..... not sure what is up here, but I didn't see ANY new responses, but when I scroll down on the REPLY page, I see several! Not sure why that is!

Glad to see some activity other than myself! :lmao:

Guess I'll do read and replies later, since they aren't showing up here on this dinosaur computer at school!

In what other surprising or unusual ways do you think that being overweight can negatively effect your life? Have you discovered things that have changed as you have lost weight that you never expected?

EVERYTHING fits better.... even my shoes and rings!! Thankfully my feet never got real big or puffy or swollen, but several pairs of shoes that I've had for years are definitely looser than they used to be.

I know I am not wearing out my side of the mattress nearly as quickly. We replaced the quilted cover on our mattress last year because it was very worn out. DH's side was ESPECIALLY concave (he is also on his own weight loss journey for the past 2 years). I am noticing that we aren't making nearly as much impact on this new cover as we previously had.

My kids are SO aware of healthier eating. Even if it isn't always what they WANT to eat, they know they are much better off eating the healthy stuff.... and they are aware that the "other" stuff needs to be occasional treats. They make NO fuss about things like whole wheat pasta (unlike a few of the teachers here the other day when the cafeteria served mac and cheese on whole wheat pasta.... what a bunch of cry-babies those adults were!!). In fact... we eat so few refined carbs now, that ANY type of pasta is cause for celebration in this house!! :thumbsup2

PAINFULLY slow computer here at school!! Making me nutty!! But thankfully this already short day is flying by. The kids are at Music until 2 and the day ends at 2:45!! I promised my kids pizza soup in a bread bowl, but that isn't going to happen. DD and I need to fly out by 5pm tonight (dry land training starts at 6pm :crazy2: ) and the bread recipe takes about 90 minutes, start to finish. IF I hadn't made eggs and toast for breakfast that might be what we would have for dinner. Dinner is starting to look like yogurt parfaits!

I hope everyone is well. TTYL................P

If you have a chance could you say a quick prayer for the Wildcats Cross Country team. We have ECC's today and the boys really want to win. If we win then our graduating seniors will be undefeated for all 4 years.
We have our work cut out for us today because the rival school has a really strong team this year and we have a lot of younger new kids. We graduated 18 seniors last year and gained 13 or so freshman.
Anyway, DS16 says thanks in advance!
I will let y'all know how he does later tonight.

Thanks!!!

Hi all. So I’ve pretty much been absent this whole challenge and not really trying. Well that’s starting to change right now. My cousins and I have a mini challenge coming up and I’m going to win because of my secret weapon.

You guys!!!!:thumbsup2

So the challenge is very do able, it’s just the fact we have not been doing much of anything:happytv: so getting back active is the hard part. It’s 5 weeks till Thanksgiving (from today). So the challenge is to lose 10lbs by then the loser (whoever has the lowest % of weight loss) has to drive:drive: home from black Friday shopping.

We are so happy you are rejoining us with renewed commitment! We are delighted to be your secret weapon! Do I get a code name? :laughing:

Good morning all! :goodvibes
Busy week, busy month so I haven't been posting much but I am reading along. Everyone is doing great! :thumbsup2

A big, BL congratulations to all of our superstars and especially to our biggest loser, elleherself! :cool1:

Glad that you are okay after the earthquake. :flower3:

Nicole, big :hug: on the kindergarten thing. I am sending you a PM but do want to say make sure that where DD might go isn't the same as where you are now. Your DD is a sweet smart girl who will be successful, just like her momma! :flower3:

I can pretty much be excited about Disney any day! :rotfl2: As I approach my Wine & Dine trip in a couple of weeks I've been looking at WDW maps and planning what I want to do. Since I'm going back in January and have to rest before the race, I have to try not to be too commando. This is also the time that I have to remind myself that the purpose of these trips is to enjoy myself and not be stressed out. It works, most of the time. ;)

Elle, hope that you got to do a spontaneous trip to the world. :smickey:

Ooo, thanks for the list, Jill, I have about half of these already so I'm sure I will like the rest! :cool1:

Hang in there on the busy times! :flower3:

Things like your furniture and shoes wearing out faster come to mind as well as increased health insurance and life insurance premiums come to mind. I'm sure there are lots of other things but, of course, I can't think of any now . . .

I love any Jane Austen novel for a classic. DS is reading Journey to the Center of the Earth now. I did not realize it is a Jules Verne novel -- I just remember the old movie. :p

Thanks to Pamela and Ashley for pinch hitting on the coaching this week. I've bumped the Question of the Day Archive. I will do a QOTD tomorrow and one for the week-end. By then hopefully we will have a coach or we may be taking turns for the rest of the challenge.

Have a great day all! :goodvibes

I will step up and volunteer to coach next week if there is no one else on deck. Thanks for taking the weekend Lisa!

Great reminder about increased costs of ALL KINDS of insurance when you are overweight.

If you have a chance could you say a quick prayer for the Wildcats Cross Country team. We have ECC's today and the boys really want to win. If we win then our graduating seniors will be undefeated for all 4 years.

Thanks!!!

Waiting to hear!

*********************

Evening all! Finally got to try a few of the things here at my new Y. Much busier place than my old Y , but also more equipment available. Tried the indoor track and checked out some of the weight stuff. May get brave and try a class next week.

Not scheduled to work tomorrow, so will try for a do-over of today! Hopefully can get some scrapping done and maybe pick out an outfit for my interview on Saturday. I never did get that recipe posted today! I'm so sorry! :headache: Tomorrow, I promise!...........P

No time for chatting now. I will definitely catch up over the weekend.

I will coach Monday-Thursday. I can take the weekend too. Just not tomorrow. Please let me know Lisa!

Well, DS16 did great! He came in 8th with a 19:44 5K. He shaved 1:26 off of his time which is just amazing!

JV won first place but over all in large division we came in second. Not bad but I felt bad for our seniors. We have been champions for 5 years now. We'll take the loss but I have to say, 12 out of the top 22 kids in JV were from our team so we have a real shot at a win next year.

Now I need to get his leg looked at tomorrow. DS has been having shin pain for a few weeks and we've been ignoring it until after today. We are hoping it's not a stress fracture. So I will make an appt tomorrow. Hopefully it's not bad because he could quite possibly go to Class LL's and States.

OK time to go to bed.
I can say I got a workout in today, I ran like crazy because we can see the kids several times x 4 races. It's not where I would like to be, but it's a start.

Night all!

I just realized I never answered my on QOTD!

QOTD Tuesday, 10/16/12: What are your favorite songs that make you want to get up and move?

I actually have a playlist on my iPod for exercise music which has everything from Beegees to Whitney Houston to Usher.

QOTD Wednesday, 10/17/12: What do you do to get excited for your Disney trips or if you haven't been to Disney, then your vacation in general?

I have a pretty large collection of Disney park music that I love to listen to, plus several Disney movies that I'll probably watch beforehand. (Beauty and the Beast is my fav!)

I heard a study on the news this morning. Carrying 100 pounds (or more) of extra weight (in your car) can lead to a 2% reduction in the gas mileage of your car. So that could easily be one person overweight by 100 pounds, two people who are each 50 pounds overweight, or an average family of four, each overweight by 25 pounds or more.

In what other surprising or unusual ways do you think that being overweight can negatively effect your life? Have you discovered things that have changed as you have lost weight that you never expected?

In all honesty, besides the benefits to myself, I never really thought about this. What a thought provoking question!

BONUS QOTD: Today is the 161st anniversary of Moby Dick.... a book that I have been trying to finish reading since April! What is your favorite CLASSIC novel??

Probably 'The Secret Garden' (Does that count?) but I'm also trying to work on reading 'Pride and Prejudice.' Personally, I prefer reading plays from Shakespeare and I'm in process of reading 'Cyrano de Bergerac' which has been really good.

~~~~~~~~~~~~~~~~~
Wow, quiet bunch here! Guess I'll catch everyone up with what's been going on with me...which has pretty much been business as usual. (How anti-climatic...) Less than two weeks until Disney! Gotta start packing! Break out the Disney music!! :mickeyjum
QOTD Friday, October 19, 2012: Reality check time! We have about four weeks left to the end of this challenge. :scared1: How are you doing? What can you do to make sure that you finish the challenge strong?
BRB with replies.
Helllllooooo..... anyone out there?? (cricket, cricket)
There are lots of us reading along even if we aren't as chatty as usual, Pamela. :hug:
Looks like CC can coach this week so maybe we can hold you in reserve for another week since you just filled in for us a few days this week? If we can get some more volunteers we can fill out the coaching schedule for the rest of the challenge if needed. Hopefully Maureen has had some volunteers.
We are so happy you are rejoining us with renewed commitment! We are delighted to be your secret weapon! Do I get a code name? :laughing:
Good idea! :rotfl2: I pick Juggler 'cause that's what I do all day long. ;)
No time for chatting now. I will definitely catch up over the weekend.
I will coach Monday-Thursday. I can take the weekend too. Just not tomorrow. Please let me know Lisa!
If you could do the week-end and the rest of the week that would be super, CC! Thanks! :thanks: I was just going to do one QOTD for the week-end since we've been a quiet bunch.
Well, DS16 did great! He came in 8th with a 19:44 5K. He shaved 1:26 off of his time which is just amazing!
Night all!
Hey Stranger! :wave2: Nice to see you, Buffy! Glad that your DS had a good meet. Sorry about the shin pain. How are his shoes? He might have worn them out with that speedy running.
I just realized I never answered my on QOTD!
I do that all the time! :lmao:
Hi all! I'm still here but it's been a crazy week. I've been reading all the posts but it's too hard for me to post from my phone - my fingers are still like sausages!! Hi Jude! :wave2: Nice to see you, too! How is your campaigning going? It is hard to do those long posts from the iPhone. Hard to read sometimes, too. :p
I'll be back later to do some replies.
Happy Friday! :goodvibes
QOTD Friday, October 19, 2012: Reality check time! We have about four weeks left to the end of this challenge. :scared1: How are you doing? What can you do to make sure that you finish the challenge strong?
BRB with replies.
Wow only 4 more weeks...Don't feel like I have started off strong so lets hope the tail end of the challenge is better...
Had a small loss this week...just never what I would really want to see.
Work has been crazy as has home...came to work with a splitting headache and just tired...have to much to do this morning to leave yet however..so I will just have to stick it out.
Hope everyone has a great weekend planned...
Good morning all! I'm afraid to step on the scale this morning. I feel heavy and I know I've been sneaking stuff here and there. = /
Hey Stranger! :wave2: Nice to see you, Buffy! Glad that your DS had a good meet. Sorry about the shin pain. How are his shoes? He might have worn them out with that speedy running.
Hey Lisa!!
Shoes are good, we bought new spikes this fall for the races and while he does need new trainers, they probably have another 100 or so miles to go in them.
We have had 2 injuries on the team this year, one stress fracture of the shin and one with a broken foot (probably started out as a fracture) so I'm going to request an xray with the dr, especially since DS16 can pinpoint the pain.
DS12 has a stress fracture in his foot so I'm learning a lot this fall about the difference between fractures and overuse injuries.
Can someone let me know when the next challenge starts? I probably won't really make it back to this challenge since we have 2 more weeks of running but I need to get my butt back in gear. I've pretty much gained everything back that I lost in the last challenge. ERGH at myself!
Good morning! Here is your QOTD for Thursday, Oct. 18, 2012
I heard a study on the news this morning. Carrying 100 pounds (or more) of extra weight (in your car) can lead to a 2% reduction in the gas mileage of your car. So that could easily be one person overweight by 100 pounds, two people who are each 50 pounds overweight, or an average family of four, each overweight by 25 pounds or more.
In what other surprising or unusual ways do you think that being overweight can negatively effect your life? Have you discovered things that have changed as you have lost weight that you never expected?
Hmm...I think this is a fabulous question, but I'm drawing a blank for a unique answer. For me the biggest realization is that exercise is not just to burn calories, but is worthwhile in and of itself. My body feels better when I make time for movement. There are of course still times when I am lazy and just want to chill on the couch, but keeping active has been a big piece to feeling healthy, not just losing or maintaining weight.
(Thanks to DD for this idea :wave2: )BONUS QOTD: Today is the 161st anniversary of Moby Dick.... a book that I have been trying to finish reading since April! What is your favorite CLASSIC novel??
Oh, Moby Dick - I think that was my least favorite required reading ever! Pride and Prejudice is my favorite, hands down. I also enjoyed Persuasion and Jane Eyre. For Shakespeare, I think my favorite was Merchant of Venice. Oh, and I try to reread A Christmas Carol every year.
Nicole, big :hug: on the kindergarten thing. I am sending you a PM but do want to say make sure that where DD might go isn't the same as where you are now. Your DD is a sweet smart girl who will be successful, just like her momma! :flower3:
Aww, thanks, Lisa. :hug:
PAINFULLY slow computer here at school!! Making me nutty!! But thankfully this already short day is flying by. The kids are at Music until 2 and the day ends at 2:45!! IF I hadn't made eggs and toast for breakfast that might be what we would have for dinner. Dinner is starting to look like yogurt parfaits!
I hope everyone is well. TTYL................P
Your crybaby comment made me laugh. The school food changes have gone over quite well at our school, at least for the Kindergarten set that I see every day.
Have you posted the pizza soup recipe somewhere before? And do you make your own bread bowls? What do you guys put in your yogurt parfaits? I am full of questions because I'm always looking for new ideas! :)
Happy Friday! :goodvibes
Please do not forget to PM kollerbear with your weigh in and thank her for being our weightkeeper! :flower3:
QOTD Friday, October 19, 2012: Reality check time! We have about four weeks left to the end of this challenge. :scared1: How are you doing? What can you do to make sure that you finish the challenge strong?
BRB with replies.
Thanks for stepping in, Lisa! I can coach a later week in the challenge. I will PM her.
I am proud that so far I have maintained my weight range every week! The past week and a half I've been eating a little more than I should, so if I want to finish strong, I'll need to dial that back a bit. I also have two trips (one work, one WDW) so those will make it a little more challenging to keep on track.
Well, DS16 did great! He came in 8th with a 19:44 5K. He shaved 1:26 off of his time which is just amazing!
JV won first place but over all in large division we came in second. Not bad but I felt bad for our seniors. We have been champions for 5 years now. We'll take the loss but I have to say, 12 out of the top 22 kids in JV were from our team so we have a real shot at a win next year.
Night all!
Congratulations!! And good luck next year! They did great this year, but I understand the sentiment. DS, who is a senior, has a playoff football game tonight. Last year they won the Division championship, this year they are the 2d seed. After being #1 last year, - for the first time in 22 years - this year has been a little tough on them. I wish they could revel in their wins and not think about those losses!!
QOTD Friday, October 19, 2012: Reality check time! We have about four weeks left to the end of this challenge. :scared1: How are you doing? What can you do to make sure that you finish the challenge strong?
BRB with replies.
This has the best challenge for me in a long time. I need to make a conscious effort NOT to sleck off and "cheat"...this is the point in the challenge I tend to fizzle so I am making an extra special effort this week!!
Hi Jude! :wave2: Nice to see you, too! How is your campaigning going? It is hard to do those long posts from the iPhone. Hard to read sometimes, too. :p
I'll be back later to do some replies.
Okay, I am exhausted from the campaign but, on the other hand, maybe that's why I've lost more than 10 pounds this challenge so far!! I am walking 2 hours 4x a week (weekdays) and 5 - 6.5 hours each day of the weekends.
People seem to be pretty receptive so my fingers are crossed. On one hand, I will be very happy when the campaigning is over but on the other, I am petrified for Election Day to actually get here!! :rolleyes1
As for the book question - I love to read!!! Some of my favorites:
Heart of Darkness, Catcher In The Rye, Little Women, Last of the Mohicans, A Tale of Two Cities..too many to choose a favorite!!
Pouring rain here today. Playoff game tonight. Soo...umbrella or no umbrella?
Umbrella = no clapping, poke someone in the eye?
no umbrella = drowned rat
Aw, heck. The boys will be out there getting drenched - time to suck it up and cheer them on!!:cheer2:
No time for chatting now. I will definitely catch up over the weekend.
I will coach Monday-Thursday. I can take the weekend too. Just not tomorrow. Please let me know Lisa!
Thanks for stepping up to coach! It is much appreciated!
Well, DS16 did great! He came in 8th with a 19:44 5K. He shaved 1:26 off of his time which is just amazing!
WOOHOOO!!:cheer2:
JV won first place but over all in large division we came in second. Not bad but I felt bad for our seniors. We have been champions for 5 years now. We'll take the loss but I have to say, 12 out of the top 22 kids in JV were from our team so we have a real shot at a win next year.
Wonderful! Second is NOTHING to sneeze at! I hope the kids were really proud!
Now I need to get his leg looked at tomorrow. DS has been having shin pain for a few weeks and we've been ignoring it until after today. We are hoping it's not a stress fracture. So I will make an appt tomorrow. Hopefully it's not bad because he could quite possibly go to Class LL's and States.
GLad you are taking it seriously and getting it looked at. Prayers going out that it is not a season-ending injury. :hug:
OK time to go to bed.
I can say I got a workout in today, I ran like crazy because we can see the kids several times x 4 races. It's not where I would like to be, but it's a start.
Great job Coach!!!!:thumbsup2
I just realized I never answered my on QOTD!
I actually have a playlist on my iPod for exercise music which has everything from Beegees to Whitney Houston to Usher.
I have a pretty large collection of Disney park music that I love to listen to, plus several Disney movies that I'll probably watch beforehand. (Beauty and the Beast is my fav!)
I LOVE Disney music! DD and I love to sing the Tangled songs!
Probably 'The Secret Garden' (Does that count?)
I loved that book as a child!!
but I'm also trying to work on reading 'Pride and Prejudice.' Personally, I prefer reading plays from Shakespeare and I'm in process of reading 'Cyrano de Bergerac' which has been really good.
I could NOT get through Pride and Prejudice! I tried for three summers in a row and just couldn't get into it.
~~~~~~~~~~~~~~~~~

Wow, quiet bunch here! Guess I'll catch everyone up with what's been going on with me...which has pretty much been business as usual. (How anti-climatic...) Less than two weeks until Disney! Gotta start packing! Break out the Disney music!! :mickeyjum

WOOHOO on the two week countdown!

QOTD Friday, October 19, 2012: Reality check time! We have about four weeks left to the end of this challenge. :scared1: How are you doing? What can you do to make sure that you finish the challenge strong?

BRB with replies.

I had a GREAT totally OP week this week and the scale showed it! I still need to step up the exercise, but I'm cutting myself some slack due to all of the craziness and the change in our Y membership. I can finish strong by continuing to do great with the eating and by increasing my exercise routine.

There are lots of us reading along even if we aren't as chatty as usual, Pamela. :hug:

Just teasing! Just feeling lonely here sometimes! My other favorite board is the scrapbooking board and that is usually quiet mid-week as well. ;)

Looks like CC can coach this week so maybe we can hold you in reserve for another week since you just filled in for us a few days this week? If we can get some more volunteers we can fill out the coaching schedule for the rest of the challenge if needed. Hopefully Maureen has had some volunteers.

I'm totally good with that! I love hearing from other folks when they are coaching!

Good idea! :rotfl2: I pick Juggler 'cause that's what I do all day long. ;)

:rotfl2: I'll be the "Taxi Driver"!! :rotfl:

I'll be back later to do some replies.

Wow only 4 more weeks...Don't feel like I have started off strong so lets hope the tail end of the challenge is better...
Had a small loss this week...just never what I would really want to see.

Work has been crazy as has home...came to work with a splitting headache and just tired...have to much to do this morning to leave yet however..so I will just have to stick it out.

Hope everyone has a great weekend planned...

:sick: Sorry about the headache. HOpe you can get some relief.

Good morning all! I'm afraid to step on the scale this morning. I feel heavy and I know I've been sneaking stuff here and there. = /

Get on that scale and face the music and start fresh! That is the BEST WAY to do it! It is ONLY a number... you've been doing great and you are ready to rock the new week!!!

Hey Lisa!!
Shoes are good, we bought new spikes this fall for the races and while he does need new trainers, they probably have another 100 or so miles to go in them.
We have had 2 injuries on the team this year, one stress fracture of the shin and one with a broken foot (probably started out as a fracture) so I'm going to request an xray with the dr, especially since DS16 can pinpoint the pain.
DS12 has a stress fracture in his foot so I'm learning a lot this fall about the difference between fractures and overuse injuries.

Can someone let me know when the next challenge starts? I probably won't really make it back to this challenge since we have 2 more weeks of running but I need to get my butt back in gear. I've pretty much gained everything back that I lost in the last challenge. ERGH at myself!

I'll keep you in the loop!

(Thanks to DD for this idea :wave2: )BONUS QOTD: Today is the 161st anniversary of Moby Dick.... a book that I have been trying to finish reading since April! What is your favorite CLASSIC novel??
Oh, Moby Dick - I think that was my least favorite required reading ever! Pride and Prejudice is my favorite, hands down. I also enjoyed Persuasion and Jane Eyre. For Shakespeare, I think my favorite was Merchant of Venice. Oh, and I try to reread A Christmas Carol every year.

I'm definitely not LOVING Moby Dick, but I'm determined to finish the darn thing! I took a day tour of the New Bedford (MA) Whaling Museum earlier this year and they had an exhibit inspired by MB and it was really interesting.... so I bought the book on my Ipad for some "light reading'!!:lmao:

What am I missing with P and P? I just could NOT get into it.

Your crybaby comment made me laugh. The school food changes have gone over quite well at our school, at least for the Kindergarten set that I see every day.
Have you posted the pizza soup recipe somewhere before? And do you make your own bread bowls? What do you guys put in your yogurt parfaits? I am full of questions because I'm always looking for new ideas! :)

Actually, the pizza soup is more an "idea" than a recipe, but I could share it. I also make my own bread bowls. Not a "light" bread, but definitely healthy and easy to make, for real bread.

Yogurt parfaits.... I usually put out the yogurt (plain nonfat greek... we sweeten it ourselves.... stevia for me, Splenda for DH, organic raw honey for the kids), chopped fruit (whatever is available but berries are best.. bananas, mango, clementine..... even defrosted frozen fruit works okay), and toppings (granola for the kids, FiberOne for me, and chopped nuts for DH). I usually allow everyone to build their own. I will also put out muffins if I have them (Vitamuffins even), or toast. Coffee and tea along with.

I am proud that so far I have maintained my weight range every week! The past week and a half I've been eating a little more than I should, so if I want to finish strong, I'll need to dial that back a bit. I also have two trips (one work, one WDW) so those will make it a little more challenging to keep on track.

Great job staying in the maintenance range.... it is harder than one would think!

This has the best challenge for me in a long time. I need to make a conscious effort NOT to sleck off and "cheat"...this is the point in the challenge I tend to fizzle so I am making an extra special effort this week!!

Okay, I am exhausted from the campaign but, on the other hand, maybe that's why I've lost more than 10 pounds this challenge so far!! I am walking 2 hours 4x a week (weekdays) and 5 - 6.5 hours each day of the weekends.
People seem to be pretty receptive so my fingers are crossed. On one hand, I will be very happy when the campaigning is over but on the other, I am petrified for Election Day to actually get here!! :rolleyes1

WONDERFUL job with the 10+ pounds! Election day will be a day of nerves, but I'm confident of a good outcome for you!!

As for the book question - I love to read!!! Some of my favorites:
Heart of Darkness, Catcher In The Rye, Little Women, Last of the Mohicans, A Tale of Two Cities..too many to choose a favorite!!

DD had to read Little Women last year so I re-read it with her. What a wonderful sweet story!

Pouring rain here today. Playoff game tonight. Soo...umbrella or no umbrella?
Umbrella = no clapping, poke someone in the eye?
no umbrella = drowned rat
Aw, heck. The boys will be out there getting drenched - time to suck it up and cheer them on!!:cheer2:

That's a great Mom for you!! Ready to take on the rain, no matter what! Go Mom!:cheer2:

Evening friends! TGIF!! I DID get called to work today. I was really surprised, since it was Grandparents day. It went by quickly though, and I avoided the boatload of goodies around!

Really good weigh-in this morning, despite "Aunt Flo" arriving yesterday.

Got that job interview tomorrow morning, so any prayers, pixie dust, and good thoughts are appreciated!

Off to find a recipe to post, as I promised!..................P

Okay.... I've only made this once, so no promises. THe original recipe (which I think I found through Pinterest) is in black.... the changes I made are in red.

Skinny Sour Cream Enchiladas

Ingredients:
• 16 oz. fat free sour cream (I used about 8 oz of light sour cream instead)

• 1 can fat free cream of chicken soup (made my own with a bit of evoo, flour, and homemade fat-free chicken stock)

• 1 tbls. fresh chopped cilantro (1/2 tbls. Dried)

• 2 1/2 cups cooked shredded chicken breast

• 1 can Mexican Rotel (drained some of the liquid)

• 1 cup chopped onions (optional) (we love onions, so not optional to us!)

• 8 low carb tortillas

• 1 cup shredded pepper jack and colby cheese blend (I used 2% cheese)

• 1 can diced green chiles (skipped these altogether)

Directions:

In a saucepan, mix together sour cream, soup and cilantro. Heat through and set aside.
This is will get to the bubble up/boil stage quickly and make a huge hot mess if you don’t keep stirring.
Combine the chicken, Rotel, onions and green chiles in a pan sprayed with cooking spray. Heat until onions are transparent.

Warm the tortillas until flexible.

Fill each tortilla with about 2 tbls. of the chicken mixture.
Top with about 1/2-1 tablespoon of cheese. Roll the tortilla up and place seam side down (or they will unravel and you will be annoyed.) in a 8×11 dish sprayed with cooking spray.

Pour/spread the sour cream sauce over enchiladas. Top with the remaining cheese.

Bake at 350°F for 25-30 minutes until bubbly and cheese is melted.

Hello! My name is Christina, but everyone calls me CC (see-see)-my initials. I love coaching. This week has been really busy and I couldn't commit to today. Thanks Lisa!

A little bit about me...I have been trying to lose weight since I can remember. I was in really great shape from about 10th grade to 2007. I now have at least 50 pounds to lose. I've seen weight ranges that say I have over 80 pounds to lose, but I'll be good with 50. :thumbsup2

I've already mentioned that I am gluten intolerant. My nutritionist calls gluten "poison to me." She is right. Gluten and oats (especially oats) are a huge factor (we are almost positive of this) in how much acne I have. Well, I'm also allergic to some acne treatments so it has been fun. My face is finally clearing up and is no longer so red. I really can't wear makeup (the last time resulted in an allergic reaction) either. Being gluten free isn't that hard. The keys for me are to read ingredients, to ask questions/advocate, and to embrace it. It's been such a worthwhile change!

I love Lisa's idea for one QOTD for Saturday and Sunday and it goes along wonderfully with an idea I have for a QOTD. I did this during a previous challenge.

QOTD for Saturday, 10/20 and Sunday, 10/21: There are so many foods that we love, but don't love their calorie counts, fat content, sodium content, etc. What is one (or more) food you would like a recipe for that is healthier than its original version? I will post the lighter versions throughout the weekend.

One thing I loved to eat (before finding out I'm allergic to oats) is an oatmeal raising cookie. I will share the recipe (I post the link.) tomorrow.

Happy Friday all,

Another insane week is finally over! Off until Tuesday though we have 2 soccer games tomorrow (though 1 is iffy due to weather and illness) and another on Sunday afternoon. Still haven't gotten back in to exercising! I'm really going to try tomorrow! I forgot to record Scandal last night so that should give me a good reason to get on the elliptical tomorrow at some point.

Up 3 pounds from last week! I just can't get into a groove with my schedule! I do have someone that I could do the Crossfit workouts with but I have to check into the next few weeks to see if it works. Too many appts and issues with the kids going on.

Had to pick up Izzie early today as she wasn't feeling well. Went to the CVS Minute Clinic and rapid strep was negative. She seems to be feeling a little better tonight though she is registering a low grade temp. We'll see how she is in the morning and if the weather improves. We had a mini thunderstorm a while ago.

Catching up on some shows right now. Hoping to get a good night's sleep. Been awake since 4:30 am! This needs to stop!

Nice to see you coaching CC!

Healthier recipes!? I'm in! I've been trying to create my own "Vitamuffin" recipe, but without much luck. I've been working with high fiber ingredients like flaxseed, FiberOne cereal, whole oats, wheat and oat bran, plus egg whites, applesauce, etc. Any ideas?

I've had some great success creating low carb treats for DH, if anyone is interested in the recipes. They are very high calorie so it would mostly for folks doing Phase One Atkins...but they are healthy otherwise, and delish!

Hope Izzie is better tomorrow. Fingers crossed for good sleep for you!

Dinner was delish! I made the curried carrot soup (recipe available on the recipe thread;) ) because DS has been asking for it. Tonight's batch was especially good! Also made spinach and cheese quesadillas to go along with.

No driving DD to swim ALL WEEKEND! Major WOOHOO for Mom! The rest of the team will be at a meet (that she wasn't able to sign up for because of the team change). No 5a.m. alarm tomorrow!

TTY soon............P
