Best Vegetarian On Property?

Heading down in February and my ADRs open up in a week. Although I think I have them pretty much planned out I was wondering what vegetarian meals would you recommend? My girlfriend doesn't eat meat and although she is super supportive and will literally eat anywhere I take her (even if that means she is only having a side salad or an order of fries) I'd like to be able to take her to some places with solid vegetarian options. I realize that most places have one or two vegetarian-friendly options but are there any specific meals that really stand out?

Any recommendations from experience?
 
There is a thread for vegetarians. I should make it a sticky. Let me know if you can't find it. I will look tomorrow when I am at a computer. The thread has been going for at least a couple years.
 

Without question you should try Sanaa. I'm a complete carnivore, but Sanaa is the one place where the vegetarian dishes eclipse the meats all day long. Plus their bread service (also vegetarian) is of epic proportions!

Definitely California Grill. Narcooses, The Wave and Flying Fish also have vegetarian menus. Food was good at all of them!
 
Our DD really liked the choices at Boma. A chef came out and walked her thru the buffet line and gave her guidance. She appreciated that at 13 years old, she was taken seriously! And her totally carnivorous family like Boma as well!
 
The rice may be made with chicken stock, for example.

Vegan here, and one of my favorite places is Tusker House. Awesome buffet. Great for vegans, vegetarians, and omnivores.

An obvious vegetarian choice is Italian food. I like Mama Melrose's at DHS. Have never tried the Italian restaurants at Epcot, but I hear good things.

QS is harder and is getting harder still, but Tangierine Cafe at Morocco in Epcot has a great veg platter. Beautiful area, btw. Very pretty place to sit and watch the Epcot crowd. There are also some vegetarian choices at Electric Umbrella and Sunshine Seasons (both at Epcot).

At DHS, QS is probably PizzeRizzo--but beware, when I was there last they closed around 4 pm. So not for dinner. I couldn't find any other vegan QS options at DHS, but I'm not as familiar with the vegetarian options there.

At AK: Pizzafari is my QS of choice (because they'll make a vegan pizza). The QS restaurant near Dinosaur has a veggie burger, perhaps only on request. There are food carts here and there in AK that have different veg foods as well. Check out the lists on the WDW site. I haven't eaten at the new QS place in Pandora, where there are apparently many veg choices.

At MK: I've kind of given up. There used to be a fantastic sandwich at Columbia Harbour House, but they recently took it off the menu. If you like chili, they have that. There's some kind of falafel sandwich at Cosmic Ray's, but it's not vegan so I haven't had it and also I've heard it's not all that. Pecos Bill's might have some veg options.

Jiko at AKL has a vegetarian menu, and the food's great. Ditto Sanaa, although there aren't as many vegan choices there as there used to be and also much of their food is too spicy for me. YMMV. Boma at AKL is also excellent for everyone.

Lots of vegetarian places to eat at Disney Springs as well. Blaze Pizza is my go-to choice. And there's a vegan bakery at DS (Erin McKenna's) where everything's not only vegan, it's gluten-free.

Many sit-down restaurants at WDW have one vegetarian item on the menu and that's it. Even though every TS place will accommodate a vegetarian or vegan, that doesn't mean that the food will be what the vegetarian would like to eat. Sometimes the chef will create something awesome and sometimes it's just okay. I prefer to go somewhere where there's something already on the menu that I'd choose to eat.

And of course popcorn and soft pretzels are not just vegetarian, they're vegan.

Disney knows vegan vs vegetarian. If it had chicken stock they would say that it's not vegetarian.

Disney may or may not know vegan vs. vegetarian--many of the restaurants don't know the difference even when you talk to the chef. You have to be specific. At least, that's been my experience. The restaurant staffs are usually familiar with the allergy stuff, but "vegan" is not an allergy, so it's been ignored by WDW. Not that I have anything against the allergy menus--they're great and necessary.

Meanwhile, I send like an email every year to WDW, asking them to have more vegan options, and explaining that a vegetarian will eat something that's vegan but that the reverse isn't true. So far, WDW sends me nice replies, but there are fewer and fewer vegan choices at WDW, especially in the parks, and many vegan foods have been removed from the the menus. For example, '50s Prime Time used to have a great vegan spaghetti and meatless meatballs. Now it's no longer vegan and may not even be vegetarian, if they even still have it. But when I was there a few months ago, the chef told me that the meatless meatballs now have egg in them.

Hadn't thought about the rennet, since I don't eat cheese--but a good point. Yet it's easy to have Italian and not have cheese. If you like marinara--and it's a real marinara and doesn't have stock in it.
 
I am a vegetarian and the only bad TS meal I had was at Brown Derby. BoG is also only OK. Signatures are great - many will offer choices not in the menu, so just have her ask what they can do for vegetarians. I often get plates with various side dishes.

My favorite meal is actually Garden Grill. They always have a vegetarian option, even if it isn't listed. I also like California Grill, Le Cellier, Via Napoli, and Crystal Palace (late breakfast for brunch).
 
Biergarten has surprisingly good vegetarian options (not great for vegans though). For quick service people seem to really like Pecos Bill's in MK.
 
For table service my wife really liked 'Ohana, The Wave, Chefs de France, San Angel Inn and Boma (a buffet). Columbia Harbor House and Les Halles (Epcot) are good QS options.
 
makes me wonder what is in the rice. Butter?
At Teppan Edo, DW and kids get the plain white rice as their brown rice is not fish allergy friendly. It's not too unusual for rice to be cooked with meat broth for flavoring.
