I've eaten sushi at all the restaurants listed here. I've never really had a bad experience in any of them.
Morsmoto's has (in my highly objective opinion) been the best, or should I say, most authentic Japanese experience. Especially when you can get things like live octopus (pretty sure its not live, I think they call it that to scare off the less adventurous) and their special Japanese version of sea urchin. (melts like butter in your mouth, but who melts butter in their mouth?) Which may not be what you're looking for, based on the various American sushi restaurants you've probably experienced. So if I've scared you off, that would be okay with me, the place is always crowded and hard to get a reservation, any time of the year, week, day. (so why am I talking this place up?)
What make Morimoto's even better is the diversity of the rest of their menu. From Peking Duck to Nasi Goreng. (see my Nasi Goreng review, hidden somewhere on this site) All delicious and all very authentic. At least in my untrained experiences. It's not just Japanese cuisine.
And if you're real lucky (as I was) you can meet Morimoto and get your picture taken with him. Very nice guy. He usually hangs out around the sushi bar if you go looking for him.
