We really enjoy Tokyo Dining in Epcot. My sushi was delicious and beautifully presented. As an added bonus, you can usually walk-up or get a last minute ADR. I’m not sure why it isn’t more popular, but let’s not tell anyone else about it. Shhhhh....
I'm from vancouver, we have thousands of sushi places so my expectations might be a little high. The sushi is average and that combined with the usual disney pricing makes it a no go for me.
The sushi at the quick service place is horrible. It's the equivalent to pre made stuff in grocery stores. Depending on where OP is from you might have to adjust your expectations when looking for sushi at WDW.

If you are at Epcot or Studios, and have some time in the evening, you can pop out to the Swan hotel, where they have an excellent sushi restaurant (Kimonos) that does not take reservations, it’s all walk up. They are only open for dinner, not lunch. The karaoke doesn’t start until after 9, and it’s usualy pretty quiet before then. Really great sushi, excellent service, and lots of choices for other Japanese food.

Did you consider venturing to Disney Springs or the swan? Morimoto would be my best recommendation at DS or Kimonos at the swan.
I live in a small town in GA also lol. We really enjoy RuSans in Athens and Kani House in Gwinnett. But the best Sushi we have had at Disney is at California Grill at the Contemporary. Better than Tokyo Dining which isn't bad.Thank you for your reply. I am from a small town in Georgia. Believe me when I say my sushi expectations are not high.

I personally think Kona Island has way better sushi than Cali GrillMy wife and daughter love the sushi at California Grill (not technically in the park). Have not tried Tokyo Dining yet.
