I agree with the comment about the Fantasyland bridge. I would also add the walkway over to Space Mtn. as a good spot for a castle picture.
On a bright sunny day, you can take a great picture on the Dumbo ride, but you will need to use the manual settings on your camera. I took a picture of my DW and DD last June that has the castle in the background that turned out just great. Prefocus on your subjects in the Dumbo behind you....set the exposure to as fast as possible with as much depth-of-field as possible. Sorry for the techno jargon, but you have to have the shutter speed snap fast enough to freeze everything while you're whirling around on the ride. Difficult to do with a pocket sized throwaway.
In AK, I like the shot of the tree-of-life from the back side of the park while walking from Africa to Asia. There are some really nice waterfalls, etc. that make the shot look even more realistic.
Canada pavilion in the WS. Enough said.
Between FW and WS looking back at SE while the monorail is crossing in front of you and fountains below SE. This shot takes some patience to get though.
